First load I've actually baked! So my third attempt at this and the first that I've managed to actually bake! First one was a complete disaster, I don't think my starter was ready and it didn't rise at all, so was scrapped before baking. Second one was going well until I went to put it in the oven and a sheet of baking paper that had been sucked to the back caught fire… Third times the charm

100g starter
450g white bread flour
260g water, fixed to 285g
8g salt

I've found my bread flour doesn't absorb as much water as it should, so I tried reducing the water. Took too much out originally but I was able to rectify

Feed my starter around 7.30am
1pm – mixed all ingredients and left to rest
1.30pm Realised my dough was too dry when I went to do stretch and folds, topped it up and squished it through with my hands, nearly gave up at this point tbh!
2.30 – wet counter, removed from bowl and first stretch and folds
4.00 – second stretch and fold
5.30 – third stretch and fold. One more than usual but was talking it slow after mixing in the extra water
7.00 – pre shape
8.00 – lightly oil bread pan, shape and drop it in. Fridge overnight for cold proof
7.00am – take out of fridge, heat up oven at 225c
7.30 – pop in for 40 mins, 20 covered with a second bread tin, 20 uncovered. I should have dropped the oven temperature half way but forgot, so took it to 180c for the last 10.

Maybe not perfect, and the prices needs some work, but really happy with the outcome!!
