One of the busiest days of the baking year for me and this was only a small amount of what I baked off today. Not seen are croissants,epis, dinner rolls, morning buns (it never ended)

What type of pans are you using for the loafs (1st pic)? Considering getting one of those 2 in 1 cast iron molds, wonder if you’re using those. These loafs look pretty much perfect in my opinion, so I’d love to replicate the process as much as possible.
And do you put the dough after proofing into a pre-heated pan or do you proof it in the pan?
