
Soooo following up my previous question about my pork belly Lechon.
Here’s Part 2!!
I did a 43 hour bath at 148°F.
Used a cooler and covered it with Saran Wrap.
Now it’s gonna sit in my fridge with a paper towel on it until Thanksgiving morning so the skin can dry out and I can use my
Convection oven at 400° to crisp up the skin.
Will post the final update after crisping. Haha
