
This is what it looks like after my third attempt at sealing this bag with a good vacuum. The FoodSaver has sous-vide mode but I can't get it to actually go into sous vide mode for some reason. I press the button and it just skips that mode (four modes but I can only select three). Using moist mode doesn't make it better. There is also a pulse mode but I don't know what that does.
I'm letting it pull vacuum for a long time but when it seals there's always gaps, because there's a little bit of moisture between the pieces of plastic when it seals.

It doesn’t have to be air tight for sous vide. People use zip locks and reusable bags.
But air in the bag when using the food saver for freezer content is a bad thing.
If you decide to replace the sealer, consider getting a chamber sealer. It’s worth the jump IMO if you use it a reasonable amount.
I don’t have a FoodSaver brand sealer but I’m going to guess that “moist mode” doesn’t pull a full vacuum (so liquid doesn’t get sucked into the sealer), pulse mode will let you quickly toggle on off the vacuum.
You could try pulse mode and just hold it down and see if it creates a proper vacuum.
Kinda sounds like you have a leak somewhere, maybe in the gasket.
Pulse mode is probably all suck no stop. Its like a blender, you hold it to vacuum then ket go when you want it to stop
I bought cheaper random bags on amazon and they dont pull a vaccum or seal as well. That could be it too.
