Thanksgiving a day early! I did cook the stuffing a bit more!

Picked up a brined range free hen at my local farm/butcher. Mixed some mayo and fresh herbs together, spread all over Turkey. It’s spatchcocked so I cooked at 425 for 90 minutes.
Mashed potatoes I’m too lazy to pull out the hand mixer so I just mash and mix them with a fork. Continue doing the same as I add in butter, salt, and milk to taste.
Stuffing was homemade. Ripped up a loaf of bread Saturday night and let it sit out. I did cook it another 7 minutes but forgot to take a second picture lol.
Gravy is homemade that I got for free at the local farm/butcher. Will be using the drippings (I had drained these already) and leftover gravy to make some homemade stock in a few days!

The bird is looking a little pink in the last picture. Did the juices run clear?
