
Thought I’d share my favourite lazy meal – I eat this at least once a week. It’s like a lentil Greek salad.
2 serves:
1 x tin lentils
1 x block fetta
1 x punnet cherry tomato
1-2 short cucumbers
Chop it up, chuck it together, add some EVOO, done! In this pic I also added hemp seeds for extra fat/protein.

Wait, a tin of lentils? Can you buy pre-cooked lentils? That looks lovely.
I do something similar with chickpeas and orzo, but I make a simple greek dressing for it. Just olive oil, lemon juice, garlic, oregano, and a little bit of honey or agave or whatever sweetener you like. I like the pop of acidity the lemon gives. If you don’t have lemon, vinegar will work. I like red wine vinegar.
