FOX 11 Living hosts Jyll & Abby share two of their favorite Thanksgiving recipes. Jyll is showing you how to use up those holiday leftover to make a delicious new dinner idea. Abby is sharing a fun and festive batch cocktail to get the holiday festivities started!

Crispy Mashed Potato Cakes2 cups cold mashed potatoes1 large egg1 1/2 cups panko breadcrumbs, divided1 tsp onion powder1 tsp garlic powder1/2 cup parmesan cheese1 Tbs fresh parsley (optional)Vegetable or canola oil for frying

Directions:

In a large bowl, combine the mashed potatoes, egg, 1/2 cup panko breadcrumbs, onion powder, garlic powder, parmesan and parsley. Mix well and taste for seasoning.Form whatever size balls you desire, then gently flatten into a 3/4 inch thick disk.Place remaining panko in a shallow dish and carefully dredge each side of the mashed potato disk to crust each side.Heat 1/4 inch oil in a large skillet over medium high heat. Gently add the mashed potato cakes (in batches if necessary) and reduce the heat to medium.Cook until golden on each side, and serve immediately.Spiced Bourbon Holiday Punch

Spiced Cranberry Syrup:

1/4 cup maple syrup1/4 cup brown sugar2 cups fresh cranberries1 cinnamon stick plus 1 tsp ground cinnamon1 star anisedash of ground nutmeg dash of ground all spice1 tsp vanilla extractzest from 1 orange

For the Punch:

5 cups 100% cranberry juice3 cups apple cider2 cups Bourbon1/3 cup orange liquor2 dashes cinnamon bitters (can use normal bitters too!) 4 cinnamon sticks1-2 star anise1 orange, sliced1 apple, sliced

To Serve:

1 bottle prosecco or ginger beer star anise, cinnamon stick, cranberries, for garnish

Directions:

To Make the Cranberry Syrup:

In a medium pot, bring all the ingredients to a boil over high heat. Boil for 5 minutes or until the cranberries begin to burst, then remove from the heat. Stir in the orange zest and vanilla extract. If your syrup thickens too quickly, add additional water to thin. Once cooled, strain out the cranberries and you will have a beautiful cranberry syrup.

In a large pitcher or punch bowl, combine the syrup, cranberry juice, apple cider, bourbon, orange liquor, and bitters. Stir until combined. Add the cinnamon sticks and star anise (Chill until ready to serve)Just before serving, stir in the orange and apple slices . Add ice to cocktail glasses and pour over the punch. Top with a ginger beer or prosecco. Garnish with sugared cranberries, cinnamon stick, apple slice, really whatever you would like!
