This is by far the biggest batch of anything I have ever made in my life.
Wish I could have gotten all the rolls in one picture but that is not physically possible for me haha!
I’m using a tweaked version of King Arthur’s milk bread rolls. 10/10 recipe, the best I have ever had (and I did a lot of testing before landing on this one haha).
For context: I run a micro bakery out of my garage and made 454 dinner rolls for my Thanksgiving Drop 🫶🏻✨

    Apparently, this is a style in baking. At least this is what I heard.. there is a semi well known baker in my city that claims that burnt goods is exactly what she aims to achieve. Apparently it’s a style in baking? I don’t know, I’m not a specialist in the subject. I just avoid her bakery.

    Everyone saying these are burnt are out of their minds lol. A very popular baker in my neighborhood (another cottage baker), who is professionally trained and worked as a pastry chef at a few restaurants, makes rolls every year and she bakes this dark too. They sell out every year. I think they look great!

    For everyone with concern about cottage laws, most of the time cottage laws concern things that aren’t super likely to get you food poisoned. These dinner rolls call for some butter and dry milk that is then cooked. No eggs, nothing that needs to be kept at a certain temp for hours before serving, these are gonna be picked up today and gobbled down. People making cakes or buttercream etc are often technically not allowed to do those at home. Most cottage industries specifically prohibit a lot of foods. Bread is one of the most common things in a cottage industry, anywhere. Personally I hate the airy whisper texture of undercooked, doughy dinner rolls, but to each their own. Just weird to see so many people saying it’s not safe to make bread in a space like a cottage converted garage. If OP has a micro bakery, the garage has been inspected by a health inspector.

    Whew! That’s a lot of dinner rolls! I’m sure everyone will love them! I messed up my own dinner rolls today…

    I noticed that the dough wasn’t rising and I was like, “This is weird..” so I started another batch, and in making that other batch, I found the butter that I didn’t add to the first batch. 🤦‍♀️

    Ooft they look delicious! Well shaped, shiny crust, lovely colour – okay so they’re dark, but they don’t look burned – they look ‘well done’, and where I’m from they’d sell out fast – fluffy inside, crispy outside – perfect for crusty roll/sandwiches, soups stews and gravy.
