Happy Turkey day to those that celebrate!

I live alone and far from family so I'm pre cooking some food that will bring back memories of home cooked Thanksgiving without cooking for hours just for one person and having leftovers for weeks. + Dinner that will help my macros

Marry Me Chicken Orzo, Dinner (3 portions)
1 lb chicken cut into cubes
1 tbsp olive oil
1/2 cup sun dried tomatoes, drained and chopped
4-5 garlic cloves
1.5 tsp Paprika
1.5 tsp Italian seasoning
1 tsp black pepper
1 cup orzo
2 tsp better then bouillon (mixed with 2 cups of hot water)
1/3 cup of heavy cream
1 cup frozen spinach

Cube chicken and heat 2-3 min in oil over medium-high
Add tomatoes, garlic, and seasoning; cook 3-4 minutes longer
Add orzo and bouillon mix; turn down to medium and cover for about 12 min. Stirring every once in a while so the orzo doesn't stick
Uncover and add cream and spinach until spinach is heated through

Chicken Casserole + Stuffing, Lunch (4 portions)
1 lb chicken
Lowery's Season salt + thyme
1 can cream of chicken
1 can green beans
1/4 cup greek yogurt nonfat
1 package stuffing
1.t tsp better then bouillon (mixed with 1.5 cups of hot water)

Season chicken with thyme and season salt and cook on the stove with olive oil spray. I cooked each side for about 4-5 minutes (until browned) then covered the pan till cooked through. Let cool and cut up into bite size pieces.
In medium bowl mix cream of chicken, green beans, and yogurt + cooked chicken
In another bowl mix stuffing and bouillon mix (you can swap this for regular broth)
Layer chicken mix then stuffing on top. Cook at 375 for 25 min

I'm having this with cranberry sauce, deviled eggs, and a sweet potato roll that I smartly ate most of with my turkey burgers earlier this week 🙂
