It has the right balance of flavor and tenderness. Anything less is an insult. Cut it into 1in cubes. Not too big, not too small. Uniformity is key. Perfectly cubed sirloin next to red onion and bell pepper. Next, the vegetables. We’re adding color. We’re adding texture. We’re adding vitamins. So, don’t be lazy. You’ll need one red bell pepper and one large red onion. Chop them into squares about the same size as your beef. This isn’t rocket science. It’s about consistency.
