    Spent far too long convinced it was lost:

    1 cup cornmeal

    1 cup flour

    1 cup buttermilk

    1 egg

    1/3 cup oil

    1 tbsp sugar

    1 tbsp baking powder

    1 tsp salt

    Combine dry ingredients, then add the rest and stir. Pour in baking dish (cast iron preferred) and bake in oven pre-heated to 400 for 25 minutes

    That’s really close to what I use and it comes out great.

    155g / 1 cup flour
    175g / 1 cup coarse corn meal
    10g / 2 tsp baking powder
    10g / 1 tsp baking soda
    10g / 1 tsp salt
    40g / 1/3 cup sugar
    2 eggs
    60g / 1/3 cup oil
    230g / 1 cup buttermilk

    One tip for you, put the cast iron in the oven while it’s preheating. Once it is heated, take out the cast iron and drop a chunk of butter in it and swirl it around instead of the non-stick spray. Then pour the battery in the hot pan. Adds a nice crispness to the outside.

    (If you adore the yummy, crusty bottom – switch for oil to butter and put your cast iron in the oven as it preheats. 

    When your oven is hot, addd the butter to the hot cast iron to melt, mix your batter. WITH GREAT POTHOLDERS pull the pan from the oven, swirl the butter so that it coats the pan then add the fat the batter. Mix it up and pour it into the hot pan. 

    It’s the best part of the cornbread 🤣)
