Completely agree. done it for the last 4 years. Tonight I was convinced to go back to standard mash. was so forgettable. This way is so much better.

I used the recipe today but just made it regular au gratin style this time because I was in a hurry. Still a hit!

Every time I’ve tried this the sauce breaks and it ends up being kind of gross looking, just milk fats and curds with half crunch and half melting potato. Outside of using something like sodium citrate how are you keeping it creamy, or have I somehow just used the wrong kind of potato Everytime.
