Wild Green Zaatar Salad (Fresh Wild Thyme Salad)
Ingredients:
2 cups fresh wild green zaatar leaves, picked off the stems
1 small onion, finely chopped or cubed
Juice of 1–2 lemons, to taste
3–4 tbsp extra virgin olive oil
Salt, to taste
Pita bread or markook, for serving
Directions:
Pick the zaatar leaves off their stems and rinse well. Pat dry.
Combine the leaves and chopped onion in a bowl.
Add lemon juice, olive oil, and salt. Toss gently to coat.
Taste and adjust — it should be tangy, bright, and lightly salty.
Enjoy right away with pita or markook bread.
