My timing was off today too. 2nd cook on the green egg. Thought we had more time to cook sides and the turkey was done. Turkey was still piping hot after about a 45 min rest haha

Brother, we wound up having a course of all sides because dinner wasn’t done. Did tri-tip brisket style and it was taking forever. I didn’t realize that the missus had unintentionally unplugged my RFX and billows. It wound up coming out OK, but man was I waiting.
