



Demogorgon sourdough
Makes 2 950g boules
1000g high protein flour; 15% whole wheat
700ml water
200g starter; fed 1:3.5:5
20g salt
food coloring – black gel and red liquid used
sesame seeds
7’30 a.m. – mixed in mixer 2-3 minutes. Divided dough & added colors. 1/3 of the dough for black. Finished hand mixing to integrate the colors.
9’10 a.m. – stretch & folds – added a bit more color to each
10 a.m. – gentle coils
10’40 – gentle coils
12’15 – gentle coils
12:44 – dough divided; pre-shaped in balls. Pour a generous pile of sesame seed on a plate
1’10 – black dough rolled out, brush neutral oil in the middle, scatter thin layer of sesame seeds
1’15 – shape red as boules, brush top with oil. Holding onto the seam side of the boules, roll the tops in sesame seeds. Place sesame of boule in the middle of the black dough – wrap and pinch black over all of red. Then flip the boules and round out (push & pull) on the counter. Place in bannetons & rest 30 minutes
1’50 – re-seal any gaps, put into fridge
The next morning: oven preheated to 260C/500F with Dutch ovens inside
Once preheated, score leaves, place in Dutch oven, bake with lids on for 22 minutes, lids off 15-20 minutes
Cool on rack for the rest of the day
Still cooling and haven’t sliced into them yet
