My wife last minute nominated me to bring a small turkey to her parents for Thanksgiving for just 5 people. Grabbed a 9 pound turkey and injected with Creole butter. Coated the outside with a mix of SPG and mayo. Turned out delicious but I missed the smoke flavor a little.

    I did a whole dry brined 20lb’er in my Genesis yesterday, spatchcocked and set on a wire rack in a extra large sheet pan. It only took about 2.5 hours at 400F to get up to 160F in the breast. Rested for about an hour and it was still hot and juicy. It was a bit sketchy for the cook though with all the grease vaporizing and dripping down the lid. The Genesis definitely needs a a good cleaning after.
