I recently got a kamado joe jr for my birthday and decided to do a brisket for thanksgiving. This was my second time smoking anything and first attempt at a brisket. I was using this recipe: https://www.smokeandsear.world/BBQ-recipes/my-first-ever-smoked-brisket-kamado-joe-classic-3-method/

Overall I was please with it. The flavor was amazing (my wife thought it was too spicy but she’s wrong). It was a little dry and not the fall-apart-tender I’d hope for so was wondering how I should improve. So if anyone has insights or suggestions let me know!

A few things:
– my brisket was ~3 lbs and the recipe was for a full ~10 lb brisket so I based the steps on the temps listed in the recipe rather than times
– I was worried about timing so I kind of cheated to the higher side of the 225-250 temp range. It ended up finishing a bit earlier than expected (because it was a small brisket)
– this meant it ended up resting 30-40 minutes longer than the 3 hours the recipe recommended.
