


This is a salted caramel apple cake made with ladyfingers, apple compote, salted caramel, and vanilla mousse. It was super delicious, but the decoration I did on top made it impossible to cut. Oh well, it tasted amazing anyways!
EDIT: For everyone suggesting a sharper knife or bread knife or sawing motions, I tried everything before I gave up, haha. It's a cake primarily made of mousse, so there was no give to the cake. I'd touch it, and the slices would just push down instead of cut at all.

Serrated knife? Like a bread knife?
Top tip for the future, put it in the freezer for ≈ 30min, just enough to harder the apples a little, the gently cut through with a serrated bread knife (use the tip, only cut the apple layer) then do a second pass cutting down through the whole cake

Eek a serrated bread knife that is really really sharp and light sawing motions would have kept it together. Beautiful dessert!

Maybe a wire like they use for cheese? Not sure if you could heat it or not though, might do funky things to the mousse. Either way, it looked incredible for the most important part! And being smooshed makes it look delicious! Nicely done!

A jam glaze might have helped. Basically boil like a quarter cup of jam in some water until it’s bubbling. Then use that to brush over the apple slices. As it cools it’ll harden. Not so much it’ll shatter, but enough that it’ll glue the apple slices and help your knife slice through without dragging all the other slices.
You might still have issues because the layer underneath is so soft, but it should help.
