


There's just something special about Sassicaia.
I know, this is too young, but it's a special bottle and wanted to celebrate Thanksgiving and kick off Christmas season.
Initial splash, some red fruit, blackberry, and oak.
Gave it a 90 minute decant while we put up the Christmas tree and baked some pumpkin pie.
Then enjoyed alongside Thanksgiving dinner.
Which, for us, was spicy aloo tikki burgers.
This evolved really nicely, picked up dark plum, blackberry, pomegranate, cranberry, rosemary, dark chocolate notes.
Acidity and tannins are so well-balanced, this doesn't feel tight at all.
This played so nicely with the aloo tikki, bringing out subtle spice in the wine itself, while slightly resetting my palate to enjoy the tikki more.
Gave the wine a little break while we had some pumpkin pie, then after clearing my palate, went back to the wine.
Unsurprisingly, last sip was the best and that clocked four hours after initial pour.
But the evolution was so much fun to see, especially while watching some Christmas movies, starting with The Grinch!
Drink now and drink against in twenty years and it will be so fun to watch this evolve over the decades.
