Who said Italian cooking can’t be healthy and magical? ✨This creamy purple cabbage soup is proof that even the simplest vegetarian Italian recipes can feel gourmet. In Tuscany, we call this vellutata di cavolo cappuccio — a humble, cozy dish that warms you up and makes vegetables taste luxurious.
It starts with sweet onions, a touch of apple (to balance the flavor of the cabbage), and a single bay leaf for depth. Once it’s soft, I add a splash of milk and blend everything into a silky, vibrant soup. Then comes the Italian twist — a few drops of lemon juice that change the color before your eyes, making it fun even for kids.
Top it with gorgonzola fondue, toasted walnuts, croutons, a drizzle of extra virgin olive oil, and a touch of balsamic vinegar from Modena. The result? A creamy, colorful bowl that feels like comfort food but still fits into your healthy, Mediterranean diet.
If you love Tuscan recipes, fall comfort meals, and vegetarian Italian dishes packed with nutrients, this is your sign to try it.Simple ingredients, seasonal produce, real Italian flavor — that’s what cooking with love looks like. 💜

  6. i had to try making this myself, it was really good. I do advise those that try to get an older cabbage and not a younger one to make the blending process easier.
