




I did the breasts for 2.5 hours at 147 with just a little salt and pepper. I patted dry and used off the shelf “Louisiana seasoned chicken fry” wet/dry batter. I dropped in the hot oil (375-400ish) for a few minutes just to crisp up the breading. I probably good have went hotter since the turkey was already cooked. 4 minutes or so max. It was the most talked about thing for thanksgiving. I did it just for fun for some of the picky kids to snack on but all the adults raved about it.
Bonus pics I was able to season the skin and bake pressed between two baking sheets and parchment paper for about 45 minutes and it was great too.
