Peking Duck Legs
Ingredients for the Duck Legs:
• 4 duck legs
Marinade:
• 4 tablespoons rice vinegar
• 4 tablespoons liquid honey
• 4 tablespoons oil
• 4 tablespoons light soy sauce
• 4 tablespoons dark soy sauce
• Juice of half an orange
• Orange zest

Instructions:
1. Prepare the Duck Legs:
o Mix all the marinade ingredients together in a bowl.
o Place the duck legs in the marinade, turning them occasionally and basting with the marinade to ensure they are well-coated.
o Preheat the oven to 200°C (390°F). Put the duck legs along with the marinade in a roasting pan.
o Roast the duck legs skin-side up for 20 minutes. Then, lower the temperature to 160°C (320°F) and roast for about 1 hour, occasionally basting with the marinade and flipping the duck to ensure even browning on all sides.
Serve the crispy duck legs with the freshly made mandarin pancakes and enjoy the unique flavours of this Peking-style dish!
