





Just me and the missus this thanksgiving. Wanted to try beef ribs.Dry brined (salt,msg,sugar, and i+g)overnight then cooked unwrapped 6 hrs at 275f until tender when poking it .Only an hour rest in oven because I was hungry lol. Unfortunately I used the wrong knife to cut it so it looks ugly af.
Smoked some veggies(carrots, Onion zucchini, and kaborcha pumpkin)under the ribs and made a smoked sichuan garlic confit since it was going to be a long smoke and wanted to utilize the drippings.
Devoured the ribs but , bark was nice but maybe a little on the leathery side, maybe a longer rest next time?First time having beef ribs so not sure what to compare it to ,but the missus and I loved it.

Looks delicious to me!
We did the same and it was just the two of us this year too. Smoked some beef short ribs and the bark was phenomenal, but they were a little dry on the inside. I did indirect heat at 250 for 6 hours. I only let it rest for a half hour. Those look delicious btw.
Nice job
