Ingredients:
240 g canned, green lentils
100 g sun-dried tomatoes, sliced
80 g pitted Kalamata olives, halved
1/2 red onion, sliced
30 g rocket leaves
100 g feta cheese, crumbled

Dressing for salad:
3 tbsp olive oil
1 tbsp balsamic vinegar
1 tsp dijon mustard
1 tsp honey
Salt and pepper to taste

1. In a large bowl, combine the drained and rinsed lentils, chop sun-dried tomatoes, halved kalamata olives, sliced red onion and rocket leaves.
2. In a small bowl or jar, whisk together the olive oil, balsamic vinegar, dijon mustard, honey, salt and pepper.
3. Pour the dressing over the salad and toss.
4. Add the crumbled feta cheese on top.
