Today we’re making Raani, a fluffy Greek semolina cake soaked in syrup. Sweet, simple, and irresistible. Start with the syrup. In a pot, combine two cups sugar, 2 cups water, and a slice of lemon. Bring to a boil. Simmer for 10 minutes. Then let it cool completely. For the cake, beat three eggs with one cup sugar until pale and fluffy. Add 1/2 cup yogurt, 1/2 cup melted butter, and one tennis vanilla. Mix well. Now fold in 1 and 1/2 cups fine semolina, 1/2 cup flour, two taspi baking powder, and a pinch of salt. Stir until smooth. Pour the batter into a greased baking dish and bake at 100 350 for about 35 minutes. until golden and a toothpick comes out clean. Once out of the oven, immediately pour the cooled syrup evenly over the hot cake. Let it soak for at least an hour. Cut into squares or diamonds. Top with coconut flakes or serve with coffee or tea.
