I don't think I've seen choice chuck roast marbling like this before and was wondering if it was healthy or unhealthy marbling.

    The entire carcass is graded off the 13th ribeye. Each individual cut, sub-primal, or primal is not graded separately.

    Sometimes, you win the lottery with other cuts due to genetic variability….

    I did end up buying it. Was $16 for this 2.5lb roast. Using it to make Korean braised beef over noodles tonight. I’m excited to see how tender this comes out.

    It’s gonna taste really good, healthy vs unhealthy marbling, I’d say all marbling is inherently unhealthy since it’s just pure fat

    Different ends of the chuck become other steaks. I can’t recall which and where, but the chuck starts to become the Denver steak, the flat iron and the chuck eye. This much marbling might be a chuck eye (which then becomes the ribeye, I believe?).
