Ingredients:
• 2-3 medium eggplants (fried or grilled)
• 9-10 cherry tomatoes, diced
• 1 small red onion, thinly sliced
• 80 g feta cheese, crumbled
• A handful of fresh basil leaves 🌿
• 2 tbsp chopped parsley (optional)
• 3 tbsp toasted nuts (cashews, sesame seeds, pumpkin seeds)
• 3 tbsp extra virgin olive oil
• Salt & black pepper, to taste
• A squeeze of lemon juice or a drizzle of balsamic vinegar (optional)
Instructions:
1. Cut the eggplants into cubes or slices and fry or grill until golden and soft.
2. In a large bowl, combine tomatoes, onion, and fresh Parsley.
3. Add the eggplant and gently toss.
4. Sprinkle with crumbled feta and toasted nuts.
5. Drizzle with olive oil, season with salt and pepper, and finish with lemon juice or balsamic.
6. Serve warm or cold and enjoy!
