I love it, but my husband mentions the piece he tried was a little too “crumbly”. I think the only deviation I made was adding a tray with steam for the first half of the bake. I wonder if swapping for bread flour would help it have a little more stretch or chew and less crumbliness. Most of the time I use bread flour, but the recipe stated AP flour so I rolled with it. The first 2 pics are right before going into the oven. Waited overnight before cutting into it.

It looks beautiful! Great job. I have wanted to try this and this gives me a nudge.
I think that bread flour would definitely make it less crumbly. I’d bet that AP flour was specified just because that’s what people who aren’t bread kooks typically have around. The fact that she uses cups and not grams in the recipe would seem to confirm that.
