Decided to give them a try. 275° for two hours. Flipped at the one hour mark. Threw them into a pan with some barbecue sauce, butter, and some brown sugar. Covered with foil back on the egg for 45 minutes. I understand now why people do them this way. I still enjoy the regular method, but this was actually pretty good. Notorious P.I.G rub and some local BBQ sauce I had.
