Tomatillo Salsa & Tallow Chips

  1. **Tomatillo Salsa**

    1.5 lbs tomatillos
    3 jalapeños
    1 white onion
    5 cloves of garlic
    1 cucumber
    1 bunch cilantro
    4 tbsp avocado oil
    1cube chicken bullion
    Salt, pepper, MSG, cumin, coriander to taste

    Prep: Dice the onion. De-seed and dice the cucumber.

    Saute tomatillos, jalapeños and garlic in 1 tbsp avocado oil until blistered and soft. Set aside to cool.

    Add 1 tbsp avocado oil, diced onion, and bullion cube to pan and saute. Sprinkle with salt, pepper, and cumin.

    Add everything (including cucumber and cilantro) to a blender and pulse. Add salt, pepper, MSG, cumin, and coriander. Drizzle 2 tbsp avocado oil in while blending.

    **Tallow Chips**

    Cut corn tortillas into 6ths. Heat tallow in a pan. Cook in batches, removing when they start to turn golden brown. Sprinkle with salt, MSG, and paprika mix once removed. Repeat.
