I want to talk to you today I want to talk to you today
about call out the king in about call out the king in
you. On the inside of each you. On the inside of each
one of us is a strong, one of us is a strong,
confident, victorious person. confident, victorious person.
You were created to reign in You were created to reign in
life. You’ve been crowned life. You’ve been crowned
with favor, a royal with favor, a royal
priesthood, destined to priesthood, destined to
overcome obstacles and overcome obstacles and
accomplish your dreams. accomplish your dreams.
There’s a king in you. But There’s a king in you. But
that’s not the only thing. that’s not the only thing.
There are negative forces, There are negative forces,
fear, insecurity, doubt. You fear, insecurity, doubt. You
go through a disappointment go through a disappointment
and discouragement comes. You and discouragement comes. You
make a mistake and guilt make a mistake and guilt
shows up. You face a big shows up. You face a big

hasn’t treated me fair…. God hasn’t treated me fair…. God

betrayal, but He did say, He betrayal, but He did say, He
would take what was meant for would take what was meant for
your harm and turn it for your harm and turn it for
your good, that He would pay your good, that He would pay
you back double for the you back double for the
trouble, that He has beauty trouble, that He has beauty
for those ashes. But you have for those ashes. But you have
to do your part. The victim to do your part. The victim
will naturally come out, the will naturally come out, the
bitterness, the chip on your bitterness, the chip on your
shoulder. That happens shoulder. That happens
without you asking. That’s without you asking. That’s
the flesh, the carnal nature. the flesh, the carnal nature.

nerve, the traffic. All that nerve, the traffic. All that

don’t enjoy your family, too don’t enjoy your family, too
frustrated to pursue dreams. frustrated to pursue dreams.
The problem is you’re trying The problem is you’re trying
to rule things that you have to rule things that you have

chatter. Don’t call out the chatter. Don’t call out the

problem with that approach, problem with that approach,
is you’re moving toward who is you’re moving toward who

thoughts are going to become thoughts are going to become

subconsciously you’re subconsciously you’re

sinner, but I’ve been saved sinner, but I’ve been saved
by grace. Now I’m a son. I by grace. Now I’m a son. I
used to be unworthy, but God used to be unworthy, but God
has made me worthy. I’m has made me worthy. I’m
covered by the blood of covered by the blood of
Jesus, redeemed, forgiven, a Jesus, redeemed, forgiven, a
new creation,… When you have new creation,… When you have
that kind of attitude, it’s that kind of attitude, it’s
going to help you resist the going to help you resist the
temptation, make better temptation, make better
decisions. That’s what you’re decisions. That’s what you’re

more. The king in you will more. The king in you will

us to live thinking, we’re us to live thinking, we’re
not good enough. We’re so not good enough. We’re so
unworthy, so undeserving. unworthy, so undeserving.
That’s the way you used to That’s the way you used to

what I’ve done…. There’s not what I’ve done…. There’s not
a mistake you’ve made that’s a mistake you’ve made that’s
too much for the mercy of too much for the mercy of
God. The enemy is called the God. The enemy is called the
accuser. He’d love to deceive accuser. He’d love to deceive
you into going through life you into going through life
against yourself, focused on against yourself, focused on
mistakes, thinking you’re mistakes, thinking you’re
washed up. Don’t believe washed up. Don’t believe
those lies. Let the king in those lies. Let the king in
you rise up. The forgiven, you rise up. The forgiven,
redeemed, righteous, redeemed, righteous,
valuable, child of the Most valuable, child of the Most
High God. This is what happened with
Peter in the scripture. Jesus Peter in the scripture. Jesus

flaws. He was hot tempered. He used bad language. He knew

Peter that he couldn’t see in Peter that he couldn’t see in
himself. He chose him as His himself. He chose him as His
first disciple. A little first disciple. A little
later, Jesus looked at him later, Jesus looked at him

to build My church…. He was to build My church…. He was
calling out the king, telling calling out the king, telling
Peter who he really was. Peter who he really was.
Underneath the weaknesses, Underneath the weaknesses,
the shortcomings, the the shortcomings, the
compromise was a mighty compromise was a mighty
leader, a strong, favored, leader, a strong, favored,
powerful disciple that would powerful disciple that would
impact the world. We look at impact the world. We look at
our flaws, how we don’t our flaws, how we don’t
measure up, we discount measure up, we discount
ourselves. …I’m just a fisherman, so to speak, Joel.
I’m just a businessperson, I’m just a businessperson,

coach, a nurse, a coach, a nurse, a
stay-at-home mom. There’s stay-at-home mom. There’s
nothing special about me…. Can I tell you; there’s a
king in you. There’s a king in you. There’s a

disciplined, history maker, disciplined, history maker,

Quit calling out the Quit calling out the
ordinary, the weak, the ordinary, the weak, the

hot tempered. Call out the hot tempered. Call out the
king. Call out the favored king. Call out the favored

patient you, the successful patient you, the successful

When Jesus told Peter ‘you’re When Jesus told Peter ‘you’re

inside of Peter. The king inside of Peter. The king
woke up. This passion, this woke up. This passion, this

weak, I’m not limited, weak, I’m not limited,
ordinary. I’m anointed, I’m ordinary. I’m anointed, I’m
powerful. I’m favored; I’m powerful. I’m favored; I’m
destined to leave my mark…. destined to leave my mark….
That king began to show up. That king began to show up.
On the day of Pentecost, when On the day of Pentecost, when

starting, they needed someone starting, they needed someone
to give the inaugural to give the inaugural
address. Out of all the address. Out of all the
religious leaders, disciples, religious leaders, disciples,
influential rabbi’s, they influential rabbi’s, they

thought he was ordinary, thought he was ordinary,
unworthy, but there was a unworthy, but there was a

grateful. Look at Peter. From grateful. Look at Peter. From
an unworthy fisherman, down an unworthy fisherman, down
on himself, now he’s on himself, now he’s
impacting the culture, making impacting the culture, making
a great difference. What a great difference. What
happened, he called out the happened, he called out the
king. He changed his king. He changed his
thinking, from doubt, thinking, from doubt,
unworthy, not good enough, unworthy, not good enough,
to, …I’ve been handpicked by to, …I’ve been handpicked by
Almighty God. I’m a rock, Almighty God. I’m a rock,
forgiven, talented, favored, forgiven, talented, favored,
anointed…. anointed….

of our mind…. You want to see of our mind…. You want to see
transformation, you want to transformation, you want to
see the king come out, you see the king come out, you
have to get your thoughts have to get your thoughts
going in the right direction. going in the right direction.
As long as you’re thinking As long as you’re thinking
ordinary, not good enough, ordinary, not good enough,
always be addicted, then it’s always be addicted, then it’s
going to be true. You’re going to be true. You’re

believe. Peter would have believe. Peter would have
been stuck if Jesus had not been stuck if Jesus had not

really was. We wouldn’t even really was. We wouldn’t even

spoken faith into his spoken faith into his
destiny. I believe God sent destiny. I believe God sent

your king. To remind you who your king. To remind you who
you really are. Not ordinary. you really are. Not ordinary.

masterpiece. You’ve been made masterpiece. You’ve been made
in the image of God. He’s in the image of God. He’s
equipped you with everything equipped you with everything
you need. You are gifted, you need. You are gifted,
talented, disciplined, talented, disciplined,

The right attitude is, …This The right attitude is, …This
giant is no match for the giant is no match for the
king in me. This cancer king in me. This cancer
cannot stand against the king cannot stand against the king
in me. This dream is not too in me. This dream is not too
big for the king in me…. When big for the king in me…. When
you call out the king, it’s you call out the king, it’s
not just your power, but the not just your power, but the
power of the Most High steps power of the Most High steps
in. Like Peter, you couldn’t in. Like Peter, you couldn’t
heal the man, but when you heal the man, but when you
take steps of faith, God take steps of faith, God
shows up. He does what you shows up. He does what you

the addiction. He’ll turn the addiction. He’ll turn

you couldn’t open, bring you couldn’t open, bring
talent out that you didn’t talent out that you didn’t

putting themselves down, putting themselves down,
speaking against their speaking against their

wrong nationality. I can’t be wrong nationality. I can’t be
successful…. They don’t successful…. They don’t
realize, they’re calling out realize, they’re calling out
what they don’t want. They’re what they don’t want. They’re
giving those destructive giving those destructive
things the right to come to things the right to come to
pass. Let me challenge you, pass. Let me challenge you,
don’t ever say another don’t ever say another
negative thing about negative thing about
yourself. You have enough yourself. You have enough
people and circumstances people and circumstances
against you, don’t be against against you, don’t be against
yourself. When you’re tempted yourself. When you’re tempted

was gone. The people were so distraught and afraid. As so

disappointments, the medical disappointments, the medical

you to quit pursuing dreams, you to quit pursuing dreams,

barrier breaker. Don’t sit barrier breaker. Don’t sit

behind the scenes. All these behind the scenes. All these
thoughts told me that I thoughts told me that I
wasn’t able. Not talented wasn’t able. Not talented
enough. I wouldn’t know what enough. I wouldn’t know what
to say. Nobody will listen to you, Joel. The enemy’s main
battlefield is your mind. He battlefield is your mind. He
doesn’t want the king in you doesn’t want the king in you
to come out. He knows you’re to come out. He knows you’re

so he’ll do everything he can so he’ll do everything he can

have a baby. They were both have a baby. They were both
way too old. She had passed way too old. She had passed
the childbearing years. In the childbearing years. In
the natural, it wasn’t the natural, it wasn’t
possible. When she first possible. When she first
heard the promise, it was so heard the promise, it was so
far out that she laughed. It far out that she laughed. It
was comical to think that she was comical to think that she
could have a child at that could have a child at that
age. Sometimes God will wait age. Sometimes God will wait
on purpose to put a dream in on purpose to put a dream in
your heart, to where there’s your heart, to where there’s
no way logically speaking. no way logically speaking.
It’s a test. Are you going to It’s a test. Are you going to
believe, get in agreement. Or believe, get in agreement. Or

yourself out of it and think yourself out of it and think
it could never happen. Year it could never happen. Year

of a baby. I’m sure Sarah was of a baby. I’m sure Sarah was

son. She will be the mother son. She will be the mother
of nations. Kings will come of nations. Kings will come
out of her…. God was saying, out of her…. God was saying,

Terry grew up in a very Terry grew up in a very

an alcoholic. When he drank an alcoholic. When he drank
too much, he would physically too much, he would physically
abuse his mother. Terry was a abuse his mother. Terry was a

angry, so distraught that he angry, so distraught that he

himself when he got old himself when he got old

boy. He was this big, strong, boy. He was this big, strong,
powerful man. He had such powerful man. He had such
hatred in his heart; such hatred in his heart; such
anger toward his father. He anger toward his father. He
drove to the house and beat drove to the house and beat
his father within an inch of his father within an inch of
his life. He exploded with his life. He exploded with
all this rage. He thought he all this rage. He thought he
would feel relieved. He would feel relieved. He
finally stood up for his finally stood up for his
mother and took care of the mother and took care of the
abuser and got the revenge. abuser and got the revenge.
But he said it made him feel But he said it made him feel
worse than ever. He cried worse than ever. He cried
like a baby, in so much pain like a baby, in so much pain
and regret. We weren’t and regret. We weren’t
created to harm the people created to harm the people
that gave us life. He that gave us life. He
realized the answer was to realized the answer was to
forgive his father. That forgive his father. That
getting revenge couldn’t heal getting revenge couldn’t heal
what was broken on the what was broken on the
inside. Terry made that inside. Terry made that
decision and forgave his decision and forgave his
father, that’s when healing father, that’s when healing
came to him. came to him.
Terry says on the inside of Terry says on the inside of
every person is a king, a every person is a king, a
victim and a fool. You get to victim and a fool. You get to
choose which one comes out. Often, we choose the victim.

doesn’t help you to heal. It doesn’t help you to heal. It

to you. Every hurt, every wrong, every injustice. That
didn’t stop your purpose. If didn’t stop your purpose. If
you’ll have the right you’ll have the right
attitude and let it go. Stay attitude and let it go. Stay
in faith. God will pay you in faith. God will pay you
back for what was unfair. back for what was unfair.

can imagine. Sometimes we choose the fool.

to leave your mark. This is to leave your mark. This is

out your message notes–we’re in part three of a series that we
started a couple of weeks ago on what does it mean to really
follow Jesus, and we’re looking at words that describe what it
means to be a follower. The first word we looked at is
the word disciple. If you missed that message, I
want you to go online and listen to it. It is a very important message
on the five definitions of what it means to be a disciple of
Jesus Christ. Then last week we looked at
another word that defines what it means to be a follower, the
word ambassador. The Bible says we are
ambassadors for Christ. The third word that I want us to
look at this weekend is the word member, the word member. The Bible says that to be a
follower of Christ means to be a member of his family and a
member of his body. Following Jesus is far more than
just believing. It’s not enough just to believe
in Jesus. The Bible says we’re not just
believers, we’re belongers. We are to belong in the family
of God which is called the church. And once we belong, then we
become. So we believe, then we belong,
and then we become all that God wants for us to be in the
first place. Now, the Bible says this. There on your outline, Romans
chapter 12, verse 5. Let’s read it aloud together. “In Christ, we who are many form
one Body, and each member belongs to all the others.” Now, circle the word belong. The Bible says that if you’re a
follower of Jesus you don’t just belong to God, you don’t just
belong to Jesus. You belong to me, and I belong
to you, and we belong to each other, and you belong to every
other believer. You’re in the family now. You’re in God’s family. Now, it’s interesting that in
the Bible two of the descriptions of the church are
the church is a body and the church is a family. The church is the body of Christ
and the church is the family of God, and in both of those cases
membership means something. In fact, the word–English word
member that we use for membership actually comes from
the Bible, and the word membership has far more to do
with life than simply like a–you know, wear a hat or
secret signal or say the password or handshake. Membership means far more than
just put your name on a roll. It means you’re vitally
connected. The Bible says your hand is a
member of your body. If it’s disconnected, it
shrivels and die. The Bible says your ears are
members of your body. They’re members. If you cut off your ears,
they’re worthless. They have no value at all if
they’re detached from the body. If you cut off your legs, your
knees, your feet–they are members of your body. If you cut it off–a
disconnected foot is worthless. It has no value. It shrivels and die. You will shrivel and die
spiritually if you’re not connected to the body of Christ. And in the same way you’re a
part of a family, and the Bible says that we have family
responsibilities to each other. In fact, look at the next verse
there on your outline. The Bible says in Galatians
chapter 6, “Let us do good to all people, especially those who
belong in the family of believers.” Now, notice it says we’re to do
good to everybody. You can’t mistreat anybody. You can’t hate anybody. You can’t show disrespect for
anybody, not being a follower of Jesus. The Bible says as a follower of
Jesus I am commanded to love everyone, to respect everyone,
and to be kind and loving to all people. Regardless of who they are, what
they believe, their lifestyle, what they do to me, I am to
return love for them. “So let us do good to all
people,” but he says, “especially those who belong to
the family of believers.” Now, again, circle the word
“belong.” In both cases, you belong; you
belong as a member of the body of Christ, and you belong as a
member of the the family of God. Now, this is a very different
understanding of a church than most people have. If you ask most people, “What do
you think of when you say church?” they think of a building, a
building or they think of it as an event, and church is
something you see on a corner or church is something you go to to
attend. The Bible says that’s not a
church at all. Church is neither an event nor a
building. Church is a relationship. It is a family. It is the family of God. In fact, it’s gonna outlast your
physical family. In fact, it’s going to outlast
everything on earth. The Bible says God created the
entire world because he wanted–and the universe ’cause
he wanted a family, and that family is the only thing that
lasts. One day there isn’t gonna be an
IBM, a Microsoft, a Hewlett Packard, a Dell computer, or
anything else. There aren’t gonna be any
businesses. One day there isn’t gonna be any
nations. There won’t be a Russia,
America, China, but there will be a family of God because it’s
gonna last forever. It’s the only thing on earth
that has permanent value, God’s family. Now, the Bible tells us that you
cannot be a follower of Christ unless you’re part of being tied
in to a church family. I mean, I hear people all the
time say, “Well, I love Jesus. I just don’t wanna be a part of
any church.” Then you don’t really love
Jesus. Let me just be real honest. You don’t love him because the
body of Christ is his church. You can’t say, “I love Jesus,
but I hate your body,” or, “I love Jesus, but I hate your
bride,” or, “I love Jesus, but I hate your family.” No.
No. It’s all together. It’s like trying to say, “I
wanna be–I wanna play football in the NFL, but I don’t wanna be
a part of any particular team.” Sorry, ain’t gonna happen. You can’t do it. It’s impossible. You cannot play in the NFL
without being a part of a specific team. It’s like saying, “I wanna be in
the United States Army, but I don’t wanna be connected to any
specific platoon.” Sorry, it ain’t gonna happen. You can’t do it. You have to be tied to a
specific platoon in the army. It’s like saying, “I wanna play
the tuba but not be a part of an orchestra.” Well, good luck. Not many people like to hear a
tuba or tu–solos. You sound a whole lot better
when you’re playing with a bunch of other people, a whole lot
better. Just as a bee needs a hive, you
need a church family. It’s like an explorer needs a
base camp. It’s like a sailor needs a ship. You cannot be what God wants you
to be–you cannot follow Jesus, you cannot follow Jesus without
being connected to his family; and the Bible calls this
membership, being a member. In fact, if you say, “Well, I
believe in Jesus, but I don’t belong,” then there’s a word for
you. You’re a spiritual orphan. You don’t have a family. You are a spiritual orphan. Now, once a year, the
constitution of the United States requires that the
president of the United States give a report to the nation
called the State of the Union. Here at Saddleback Church we’ve
had a similar tradition for 30 years, that every year in the
month that the president gives a State of the Union message I
give what we call a State of the Church message in which we take
a different section of Saddleback Church, a different
part of our strategy, and I explain it to everybody in
detail. It’s kind of an inside scoop. We only do it once a year, but I
wanna do that this morning where I explain to you why we believe
in small groups and how they are designed to help you develop to
your spiritual maturity. There are about 10,000, quote,
mega churches in the United States. A mega church is any church that
has over 2,000 people coming on a weekly basis. There are now about 10,000 of
those in America. There are probably 5 or 6
churches about the size of Saddleback that run over 20,000
in attendance on a typical weekend. The media typically treats
churches like this as saying–these mega churches as
if they’re some new phenomena, like they’re some modern result
of marketing or something like that. Well, it just shows a lack of
knowledge of history because Christianity has a 2,000-year
history of extremely large churches. Dating all the way back to 2,000
years ago, the very first church that started in Jerusalem, the
very first church was five times the size of Saddleback Church. Most people don’t know that,
but–the idea of a mega church is not a new idea. It was–Jerusalem was an
enormous church. And before we look at the
strategy, I want you to just see this to notice the growth
because the Bible is very specific about it. Now, the book that tells us the
history of the church is called the book of Acts. It’s the Acts of the Apostles,
and it’s actually the acts of the early church; and it was
written by Luke, the same guy who wrote the Gospel of Luke. Luke was a doctor, a physical
doctor, a medical doctor; and in Acts he gives us a running
progress report of the growth of Saddleback Church. He tells–he–of the Jerusalem
church. He tells–yeah, I wish. We’re actually Acts chapter 29,
so–but Acts records the exponential growth of the
church, and he gives us very detailed progress reports. So let me just quickly take you
on a little survey here through the book of Acts. When Jesus Christ died and then
rose again, he told his followers, “I want you to wait
here in Jerusalem until I send my Spirit, and that will be the
beginning of the church.” And he goes back to heaven, and
the Bible tells us in Acts chapter 1, verse 15 that there
were about 120 believers. You can see that there on your
outline. One hundred and twenty believers
were meeting, waiting in the upper room for God to send his
Spirit before Pentecost. Then in Acts chapter 2, we have
the story of the first day of the church. It’s called the Day of
Pentecost, and it says on that day Peter preached and 3,000
people were added to the church that day. The very first day of the
church, 3,000 people, it says, were baptized and added to the
church. So they were a mega church on
the first day. I would say you’re not really a
New Testament church till you have at least 3,000 people
because that’s what they had on the very first day of their
church. Then down in verse 47 in Acts
chapter 2, as we go through the book it says the Lord added
daily, circle daily, those who were being saved. So the church is growing on a
daily basis. Now, how many days in a year? Three hundred and sixty-five,
which means at least 365 people
are being added to this church at a minimum every year. At least 365 people. So it’s growing at least that
much. Every single day people are
being added to the church. Now, by the time we get to Acts
chapter 4, it says that in the church at Jerusalem, Jerusalem
Community Church, more and more people believe–no, it says the
number of men grew to 5,000. Now, notice that says men. Everywhere you’ve got 5,000 men,
how many women and children have you got? At least 10 or 15,000. So by this time, by Acts chapter
4 the Jerusalem church is already at 20,000 people. That’s about the size of
Saddleback on a weekend. So by chapter 4 they’ve already
got 20,000 people coming to the church at Jerusalem. Then you get to Acts chapter 5,
and it says more and more–excuse me. Acts 4, the number of men grew. Then Acts 5, more and more
believed and a multitude was added. Now there are so many people
they’re not even counting anymore. It says the multitude was added. It’s just an innumerous amount. Then you get to Acts chapter
5:28 and the critics come to Peter and John, who are leaders
of the Jerusalem church, and they say, “You have filled
Jerusalem with your teaching.” Well, yeah, I guess so because
this church is growing and it’s exploding and everybody is
hearing the news, and this mega church is having a mega impact
on a mega city. Then in Acts chapter 6, it says
the number of disciples rapidly multiplied. Notice we’ve moved from
addition: the added daily, 3,000 added. Now we’re going to
multiplication, and they are rapidly multiplying. This is what’s called
exponential growth. The church is growing so fast
they can’t even keep up with it. This is God’s will for the
church. God wants his church to grow,
and God wants his church to grow fast. The number of disciples rapidly
multiplied. That’s New Testament growth. In verse 7 it says the number of
believers increased rapidly. Again, rapid exponential growth. Now, I could take you through
the whole book of Acts, but let me take you over to
Acts chapter 21. Acts 21 is approximately 25
years after the church has started in Jerusalem. How many people have they grown
to in 25 years? Saddleback’s gonna be 30 years
old on April 4th. The Jerusalem church–in 25
years later, Paul comes back to Jerusalem and he is told,
notice, tens of thousands have become believers. Tens–it literally is tens of
tens of tens of thousands. The word there in Greek is the
word myrios. Myrios literally means tens and
tens of thousands. We get the word myriad from it. You know what myriad means? Too numerous to count. The church was so big they
couldn’t even count them all. Bible scholars believe that by
this year, the 25th year, the Jerusalem church had grown to
over 100,000 members. You say, “Well, how big was the
city of Jerusalem?” Well, archaeologists tell us
that Jerusalem was a city of about 200,000 people. So you have a city of 200,000
people and 100,000 members of one church. That’s what you call church
growth. ……… announcer: You know, this

Jerusalem grew to 100,000 people in about 25 years. Where in the world did they put
all those people? I mean, you think we got a
parking problem. Think about 100,000 people
trying to get together for one church service every week and
then going out. Well, the Bible tells us the
strategy that they used, and it’s very important for you to
know the strategy of the Jerusalem church ’cause it’s the
exact same one we’ve used here at Saddleback for 30 years. It’s there on your outline. The Bible tells us in one simple
sentence the church strategy at Jerusalem. Acts chapter 5, verse
42, “(They met) day after day, in the temple
courts and from house to house.” Now, I want you to circle temple
courts and circle house to house because these are the two
different structures of a biblical church: temple courts
and house to house. What are we talking about here? Well, you might write this down. It’s large group worship, and
it’s small group fellowship. Large group worship, and small
group fellowship. First, it says they met in the
temple courts. Now, I want you to–this
is–maybe seem picky, but I need to explain it to you. Circle the S on courts. Notice it’s plural. They didn’t meet at
the temple court. They met at the temple courts. What does that mean? One church meeting in many
locations. Now, notice it doesn’t say that
the Jerusalem church met in the temple. They didn’t. They did not meet in the temple. It said they met in the temple
courts, which are around the temple. Why didn’t they meet in the
temple? Two reasons. Number one, it wouldn’t hold
everybody. The temple certainly wouldn’t
hold 100,000 people. But number two, they were
forbidden to go into the temple. Jewish law kept people out of
the temple. In other words, people couldn’t
just go into the temple. Only the priest could go into
the inner court, and nobody could go into the holy of holies
except the priest once a year on the Day of Atonement. So the temple wasn’t like we
build today church or auditoriums where everybody gets
together and sings “Kumbaya.” Nobody went in the temple. They went up to the temple, and
the priest went in the temple. So they didn’t meet in the
temple ’cause they weren’t allowed to it and it wouldn’t
have held them anyway if they could; but they met in the
temple courts, and all around this temple were these
courtyards outside. Now, I’ve been to Jerusalem. And if you’ve ever seen
Solomon’s temple and the courts and the remains of it, it’s very
obvious that the temple courts could have held maybe 50,000
people easily. And so if they had two services
on a weekend, they could easily have 100,000 people at service
because in those days you didn’t sit to worship. You stood through the worship. And so they could have 50,000
people in temple courts, but notice they didn’t try to all
meet in the same court. Here’s a giant church meeting in
many different locations. Now, why do we believe in small
groups? The reason we do it is because
Jesus told us to do it, and it’s a biblical model. When Jesus started his
ministry–public ministry, he was 30 years old. The first thing Jesus did was he
was baptized as an adult. If you haven’t been baptized as
your personal confession of faith because of your decision,
you need to be baptized. Now, Jesus was
dedicated as a baby. Did that invalidate his
dedication? No. But at 30 years of age, he went
down the Jordan River and John the Baptist baptized him. There’s a difference between a
baptism of confirmation, which was your parents’
commitment–yeah. I mean, you had nothing to do
with it. I don’t even remember that. But there’s the baptism of
confession, which is your decision as an adult. And we baptize people as adults
in this church. Why?
Because Jesus set the model. And if he did it, we’re gonna do
it his way. Evidently, his dedication as a
baby was not enough. He was taken to the temple at
day 7 and dedicated by his parents, but when he got 30
years of age he said, “Now this is my decision. It’s now my faith.” If you haven’t been baptized,
you need to be baptized the way Jesus was. Then the second thing Jesus did
is he started a small group. He went out and he gathered 12
guys and he said, “You’re gonna be my small group.” And for the next 3 years he
traveled with his small group. Even Jesus needed a small group,
and he was perfect. You need one even more than he
does to make it in life. Now, there are four advantages
of a small group. Would you write these down? Number one, small groups are
relational. Small groups are relational. Now, why is that important? Because life is all about
learning how to love, and you can’t love unless you build
relationships. You have to learn to love, and
you can’t–small groups are the laboratory for learning
relational skills. They’re the laboratory for
learning how to love. You can’t have a conversation
with a crowd. I mean, you can’t have a co–we
can’t have a conversation right now. You’re just listening. This is called sit still while I
instill. It’s one-way conversation, and
you can’t say, “Hey, Rick, what about? And did this mean? And what about that?” But in a small group you can ask
questions. In a small group you can pray
specifically for each other. In a small group you can get
support, you can share, and you can build relationships in a way
that you can’t do it in other ways. See, one of the problems of our
culture today is that we live among strangers, and people
aren’t learning relational skills anymore. They’re not very good at
relationships today. Why? Because we don’t have porches. People don’t sit outside and
talk to their neighbors. You know one of the worst things
that created a nation of strangers? Electric garage doors. Because you can click the
electric garage door, get in your car, drive out, go to work. When you come home, click the
electric garage door, go on in, and close it. You don’t ever have to meet your
neighbors, and my guess is you probably live on a street that
you don’t know people who’ve lived there for years. And one of the reasons why we’re
not very good at relational skills is we don’t have a
laboratory to learn them, and the evidence of that is the
divorce rate in America. People get married and because
they don’t have relational skills they don’t know how to
solve their problems, they don’t know how to solve their conflict
and the relationship dissolves. If Jesus said the most important
thing in life is learning how to love, and he did–it’s called
the great commandment. Love God with all your heart. Love your neighbor as yourself. Then the most important thing
for you to do is to learn relational skills. Loving God, loving other people;
and you do that–you can’t do that with a crowd. Now, you don’t have to know
everybody in a church for it to be your church, but you do have
to know somebody. You don’t know everybody on your
row right now. That’s okay. But you do have to know
somebody, two, three, four people who that–when you get
sick they know you’re sick, when you get laid off they know
you’re laid off, when you get–when you’re in the hospital
they know you’re in the hospital, when you need a
babysitter they know you need a babysitter. And somebody knows your needs
and they help you, they show up when you need them. You don’t need 100 friends in
life, but you do need 3 or 4 really good ones. And small groups are a great way
to help people learn groups. See, a lot of churches, all they
have is public worship. They don’t have the house to
house and as a result there’s no way for people to really get to
know each other ’cause you don’t get to know each other at
worship. All you get to know is the back
of the head of the person in front of you. You might like it or you might
not, but the truth is that’s not a very deep relationship. So small groups are relational,
and that’s why we do it. The Bible says life’s
all about love. Number two, small groups are
flexible, and the value of that is they’re not like a worship
service and it’s the same time every week. You can change the time. You can change the location. Small groups can meet any time. They can meet anywhere. They can be readjusted. You know, the small group that
I’m in right now I’ve been in 5 or 6 years this–the one I’m
in–currently in right now, and a lot of times we all can’t meet
on the same day. It was like, “Well, we can’t
meet our normal Tuesday.” Okay. Well, we get on the email or we
get through phone or text message, “Could you meet on
Thursday?” Some times it, like, takes 10 or
12 messages till everybody goes, “Yeah, we could all do
on that one.” And we change where
we’re gonna meet. We don’t meet at the same house
every week. We rotate.
Sometimes it’s our house. Sometimes it’s
somebody else’s house. We’ve met at restaurants. We’ve met at Disneyland. We’ve met outside. We even had an all-nighter one
time and like–it was like a–you know, an overnighter, and
the result is you build relationships. Small groups are flexible so
they can meet any time or anywhere. You don’t have to meet in church
to have a small group. The Bible says this. Jesus said in Matthew 18:20,
“For where two or three come together in my name–” That’s
called a small group, folks. “Where two or three come
together in my name, there am I with them.” There is a presence of God in a
small group that doesn’t show up in ways in other ways. And so you just get two or three
people together and there–Jesus says, “I will be with you in
that moment.” They’re flexible. Number three, small groups are
expandable. Jesus said we must care, so we
keep reaching out. How do we do it? Through small groups.
They’re relational. They’re flexible.
They’re expandable. Number four, they’re economical.
They’re economical. You can just put that at the
bottom of the page ’cause there isn’t a dot there. What do I mean by that? I mean, we don’t have to pay
for them. There’s no overhead for the
church. We believe that Saddleback
Church is not a building. It is not a building.
Church is people. It’s a family. It’s a flock. It’s the body of Christ. It is not a building, and we
proved that by being the first church that grew to over 10,000
people in attendance without a building. We waited in this church 15
years before we built this building. This was the first building we
built and Saddleback already had over 10,000 people in its
family. No church in history had ever
grown to 10,000 people in America without a building. We just wanted to prove church
isn’t a building. It’s people. And we are far more interested
in building people than we are in building buildings. We believe that buildings are
tools, not monuments. They’re just tools for ministry. You don’t build them as

It comes with tableside cheese. This is your new chicken
parmesan, right? I’m so very excited
to share this with everybody. Let’s check it out. Now
let’s see what this looks like. All right cheese. Oh my. Wow.
Bro. That is incredible. Look at this plate. So it’s the chicken parmesan. The Bronx chicken parmesan that everybody loves
for the restaurant. Yes, you’re elevating it. You have the broccolini
on the plate. You have that beautiful vodka
sauce on here as well. But that melty cheese melted
cheese makes it so amazing. You have the crispy chicken
and the melted cheese on top. We everybody been loving it. And I’ve been loving it. And right on top of the dish
you get more parmesan Reggiano. You get that
fresh parsley on there. All right I’m going to cut in
and look at this y’all. When you talk about cheese. Whoa. Look at that cheese baby. Oh my. That’s what it’s all about. Cheers. I want this in sandwich form I want this all day, every day. Now, you just introduced
this dish along with a lot of new dishes
you have on the menu. But this one’s by far
been the most popular, right? Oh, people have been going crazy about this, but we also have amazing
new dishes, new menu, new menu, super excited for everybody
to come and try it. I want to start over here
real quick. What’s the name of this dish
and what’s in it? That’s a new burrata. or caprese salad. So it’s melon cantaloupe You have tomatoes.
You have shaved onions. You have fig jam in there
burrata on top, basil. And then right next to it.
What’s this one? Oh my God, everybody needs
to try this arrabbiata sauce. Arrabbiata means angry. Angry sauce. With some stracciatella,
stracciatella is that feeling of the burrata. So heavy cream and mozzarella.
It’s going to be amazing. Now in the back.
What’s going on with this one? That’s orecchiette, orecchiette
is the ear shape pasta with broccolini
in their sausage. You get to bell peppers. You get garlic. You get onions. You get the San
Marzano tomatoes as we finish it up with some goat
cheese and amazing breadcrumbs. Homemade toasted breadcrumbs. Wow, that’s really nice. This is not your ordinary
pork chop. So we have a pan fried
Milanese style pork chop. But instead of putting salad
we put fig jam in there. We put a little bit of pecans
and we put crispy prosciutto we serve it
with some veggies. But then right next to it. It’s not just crab cakes. Crab cakes are boring. So we thought we make shrimp
and crab cake and we put some pesto
in lemon butter sauce on top. In the back. This is
one of your favorite pastas you have on the menu, right I love this, it’s so simple
but so delicate. That is just incredible. Like black wedding spaghetti. And we put garlic, an extra virgin olive oil,
a little bit of jalapeno a little bit of shrimp and
some pancetta This one is like the
one to get right You said it’s like the golden ticket for
if you’re a seafood lover. We have a shrimp and calamari
seafood risotto. But we also can add
scallops on top like this. So you guys got to
come out here. Mare e Monte
here in San Antonio, a brand new menu happening
right now. The popular new chicken
parmesan tableside. That’s the dish
to try right now. But I tell you, you can’t go
wrong with any of these dishes. Mark, this is a great
looking bronco, right here Isn’t it? This is sweet looking and you got some great deals
on other Broncos. You know, David, you’re not even old enough to know
the origin of this vehicle. This is the modern version
of a 70s Bronco which takes them
all the way back. But we have Bronco right now

and a half ago. People

with Chef de Cuisine. Taylor Chambers,
thank you so much for having me. Absolutely glad to have you. Now this whole restaurant, the emphasis
a lot has to do with the masa. We see that being utilized
right here in different ways. These are sheets of masa. Put on the flat top
and right in front of us. You have two masa balls and you’re going to show us
how to make an item. That is on the menu
it…s very popular. What are we making right now? We’re going
to be making our sopecitos Ohh, ok. Yeah. So essentially what we want
to do is just take your ball and you’re going to want
to flatten it out to the sides about yea big Okay. Now the idea is we…re
going to start making a cup. Yeah. So you want to kind of start
folding in the inside so you get a little bit
of a rough shape of a cup. Oh man. Here’s.
Looks good. Don’t worry. Mine used to look like that too. Yeah. Mine. Mine does not look like a cup. It looks like a bowl
of something. It looks like weird. Oh, no. As long as it holds
the food and you get to eat it it still works, right? Yeah. It’s still works
the emphasis of the restaurant. Of course,
a lot of the dishes happen are based
around the masa. Correct. What is the importance of that and why is that
the focus of the restaurant? They got the idea of really focusing on this ingredient
that kind of speaks across
the entire country of Mexico. As like one of the most
important things that we have And bring it to Texas. Do you have a couple more
dishes? I see mushrooms out. You have some chicken on
the grill. We’re gonna leave you
to it, chef. I know you got a couple more
things you’re making. We’ll meet you out in

They’re filled with a salsa morita, a campechano
which is a mixture of meats. We do, wagyu beef belly
bacon and chorizo Cheers. Oh, wow. Explosive, it…s a lot of fun This is our pollo al recado negro with salso mexicana A little. toasted our bowl with red
onion salad, and some nopales on
there as well. This one reminds me
of, like, a backyard asada Yeah, we’ve all been to those,
and they’re super fun, you know? So, I just highly suggest
you get a little bit of chicken, a little bit of salad,
if you like spice grab some arbols, and throw it in
our, homemade tortillas. We got the spiciness
this on there. Here we go. Give me some elbow.
Bam! Yeah, that was pretty good. If it ain’t dripping,
you’re trippin. You already know that one. Chef. Real quick, we got to jump in
between those other dishes. This item
right here is very popular. Gotta do it. And during Covid you said
this thing really took off. So tell me what this item is. How it’s built
and what’s on it. Sure. This is our suadero taco. It is confit Wagyu brisket,
so bring Texas in right? It…s a little bit of matcha. Pika, pika with a lime juice,
some salt, all that’s
kind of tossed together. And then we have
some fresh guacamole on top. And some onions pretty simple, straightforward,
but it has many, many layers, as you’ll see.
And it is, quite the taco. I mean, that’s jam
packed. Oh, yeah. With those fresh tortillas
as well. That’s the bite. Oh, oh, and look at that. That thing is dripping. I understand, I understand
the craze of this thing There you go. There you go. Suerte here off East

Andrew Satterwhite. Thank you so much for having us How are we doing,
sir? Doing well man. Now you got two steaks right in
front of us. These are like the cuts to get when you come out
to the restaurant. You got a strip and a filet.
What’s going on over here? So right here we have our 14
ounce New York strip. It is Rosewood Ranch from Texas. And then we have our most tender
cut of beef. The filet mignon
or the tenderloin. It’s eight ounces
of pure delicacy. You have a seasoning blend
right here. What makes it special? What makes it special
is it’s our signature blend. We have four different kinds
of salt in there. We have some brown sugar. We have garlic powder, onion,
a few other spices. And it sets it off.
Really? Really. You can’t tell us, right.
It…s a proprietary secret It’s a it’s
a definite secret for us. We try not to expose too much. And you guys gonna let this cook
for a little bit? What’s the finish
you’re looking for on this? So I like my steaks at mid rare
I love it. All right. So we’re looking for that medium rare finish
coming out to the table. And chef
I know you got a couple of the dishes you’re making for us. So I’m gonna leave you
to it. Yes sir. And I’ll meet you out there
in the dining room. All right. Smells amazing. Now we’re out here
in the dining room. And, chef, you brought out
all the hits off the menu. We saw
those two steaks in the back. You also have some other items. But this one here
in the front of us. This is the item to start out
with. Talk to me about what’s going on
and how you use it. This is our Japanese
A5 hot stone. It is a dining experience where we bring it to the table
and you get to cook it a little. That’s fun. That’s got to be the way
you start your meal. Every time we’re going
to take it off the table, so we don’t actually
burn ourselves from it, and then we’ll dive
into the rest of the food Aight chef,
what’s the dish to try before you get started with the steak,
our heirloom tomato salad. It has white balsamic pearls stracciatellato 12 year age
balsamic and fresh basil. This is like a cold, deconstructed
like grilled cheese sandwich with the tomato
soup on the side. This is rocking And right here in the middle.
Chef, what’s going on? We have our cream spinach. It is a staple of steakhouses. We use a cotija cream sauce. It’s actually the same
cotija cream sauce that…s on our
signature steak right here A great addition to a really nice steak. You also have something
in the back, right? There’s a lot of broccoli
in the back, but we like to do a little bit
different here. We have our chard Meyer lemons. Then we dunk in our citrus aioli
which is a house recipe as well. That is insane. This aioli I…m gonna take
a jar of that home. I want to put that on
everything. The two steaks,
the one on the front of the strip,
you actually have a little. Is that a prawn in the front? It is a Madagascar shrimp. Fantastic. That’s how you cook a steak. All right, now, what’s going on with all this business
here on the bottom? It is a pipian sauce. It is a version of mole That is incredible. That’s why it’s my favorite cut. And last but not least,
the filet lobster on top. This is the dean’s
signature steak. It is a eight ounce
filet like we saw. It has red au jus
at the bottom. It has our cotija cream.
And then lobster claws Come on. Every bite is a hit. These two desserts
look incredible. We have our heavenly chocolate cake,
which has, edible gold flakes. We have our bread pudding. It has bourbon, caramel,
pecans and vanilla gelato. Dean’s steak and seafood. I don’t think it gets any better
than what we just had here
for San Antonio’s. Then we also have
a nice little schoolhouse. You can just go and have after

serving up new American cuisine, offering
a wide variety of flavors from all across the state of Texas,
including dry aged Wagyu steak. Let’s go see what they got
grilling up. At Isidore Joining us
now is the chef de cuisine here in the kitchen Ian Lanphear Thank you so much for having us. Thank y’all. Now right in front of us,
you have a gorgeous steak. The marbling is out of control. You can see more
fat than even the red on here. Here at Isidore We like to focus a lot on using some cuts
that you wouldn’t see utilized
in other restaurants. Here is our Denver. So coming from the chuck area the cow
kind of towards left shoulder. This one is a Wagyu coming from
Peeler out in Floresville Texas That is beautiful. And you can see on there
I mean man this is just
marble to perfection. And that’s just flavor on flavor
right there. Melt in your mouth. It’s already been cut down
from here. We take it we season it. We just like to use
a little bit of salt. That way we just really let the beef speak for itself. Before we drop down, we’re gonna brush in
a little bit of beef fat. You guys just stack it
on the flavor. Yes we are. Oh, fantastic. That’s beautiful. Steak is on the grill
now, chef. You’re. gonna be making
a couple more dishes for us that you…re gonna have prepared. So we’ll meet you out
in the dining room when you’re ready.
I’m looking forward to it. Chef. Now we’re here in the dining
room and right in front of us. You brought out the steak
that we saw getting prepared in the back. Plus some other dishes and
some drinks from behind the bar. I want to start off
with the steak. The plating is beautiful. It looks like a piece of artwork
right here. Alongside of that, we have
some cucumbers that we take. We char them on the grill and then we marinate them
in a green tomato water. Beautiful. Outside on here
and a perfect medium rare. And I want to get some of that
saucy action. Cheers Wow. It has to be the most
tender steak I’ve had in a very long time. Just melts in your mouth. I mean, the flavor on
that is over the top and then the sauce too right
amount of saltiness. You want to balance out the fat. It’s really challenging to not come back
and eat the whole thing. And then in the front
right here, what’s going on with this bowl? So this is our,
red snapper crudo. We have some, thinly sliced red
snapper crudo. Then on the bottom of that
is a benne seed salsa macha. On top. We have some fermented daikon
radish and some fresh cucumber. And then we dress it
all into like an dashi. It’s an organism
made up of algae and fungus. Cheers. Oh, wow. Fish is just really,
really nice. It’s delicate. And then the crunch on there.
The texture. I love that bite, but it almost
feels like you’re outside too. Just kind of foraging,
looking for good food. I’m liking the lichen
right here in the back. What’s going on with this dish? This is our tilefish We poach it and a little bit of smoked
butter that’s infused
with some wax myrtle. And then on top is just,
lattice squash blossoms. And we have a ember squash
on the side of that with a little bit of yogurt
and herb salad on top. And then the sauce. The star of the show is a green curry made using all Texas
ingredients. All right, here we go. Cheers. Bam! Wow. It’s buttery
packed full of flavor. The tenderness of the fish.
Gosh. That’s good.
And I want that sauce. The sauce
really is the star of the show. Now we’re going to jump over
to this dish. What’s going on
with this one. Yeah. So this is our,
waygu beef tartare. So kind of a take on French
onion soup. On the bottom
there is a little bit of caramelized onion,
and we top it with a gruy…re Cheers. That right there. Money. My goodness. It’s like,
got that nice salty punch. But then the beef super tender
melts in your mouth. I love the crunch the cheese.
Everything just works so well. The onions are perfect in that they’re caramelized
to perfection. Nice and tender. It all just
works in a really nice bite. And this right here is like a
is it a whiskey flight? Yeah. So it’s a Texas whiskey flight
featuring all Texas whiskeys. Chef, thank you so much

huge food since 2009. They got a new outside. They got some new stuff
on the inside, but you got favorites
on the menu. You don’t want to miss. Let’s go see what
they’re cooking up at Grandy D…s I feel like I’m going to. Now we’re here in the kitchen
with co-owner Robin McCleary. Thank you so much for having us. And you know, granny of you, you guys are still running
the spot here. It’s still very much family
owned and operated. And it’s all about the big bites
out here at this restaurant. And right now,
you’re about to make for us one of the biggest things
on the whole menu. It’s gigantic pancakes, right. What’s the first thing you do
to make this so we we chopped up all the apples
with out of them comes in here, we put about three
big scoops of, pancake batter. And now we spray our grill,
and we’re going to make some big pancakes on a Saturday. We probably guys are about
two cases of pancake mix. Oh, wow.
Because they are so big. You can see our bucket here.
Yeah. We fill these up. We make two of those at a time. This probably makes,
I don’t know, maybe ten, maybe. Still just shows
how big we make our pancakes. So this has apples and pecans
in it Oh, that’s a pancake. Oh, I ain’t done. Yeah. Hold on. Oh, you get one of those. But on a full stack
we’re going to do three. So it’s been
just a couple of minutes here. They’re ready to flip. You got a good technique. What. Wow. Oh. All three of these
are ready to rock. Time to plate em up My gosh all for one plate Oh, that’s the best
stack of pancakes you could find in Texas,
right there We’re going to warm it up
nice hot get it on there and take our caramel drizzle. And add those delicious
pecans These look absolutely delicious. Now I know
there’s a couple more items you’ll be making out here
in the kitchen. Big items. Big items. We…re talking biscuit
sandwiches, all kinds of stuff. So I’ll take these from you.
All right. And I’ll meet you out in
the dining room. Ok Now we’re out here in the dining
room, and, Robin, your team has put together
an insane amount of food for us. This is gigantic. Every plate is
just over the top. But this full stack of pancakes,
it takes the cake. No pun intended. It
does, though. And all the apples on top. You have all the caramel on
there and the pecans, pancakes. It. It’s surprising
how not overly sweet that is. I feel like
I can eat the whole thing. You probably could try Yeah. What’s the secret
to your French toast? So that’s our banana foster. That’s a nice brown sugar glaze. And then we put a fresh
bananas in it. We do a, put it on the stove. We do a little bit of cinnamon sugar and a little
bit of other things. Ok, I can…t tell you

everything I know. Here we go Give me some love on that one
Bam! Wow. Yeah. One of the front here. This is nice. That’s a lot of gravy. That’s our big dam biscuit. It’s a nice fresh biscuit.
Two tenders on top. American cheese. How ever you
want your eggs right now? We have scrambled on it.
Smothered in the sauce it…s great. Scratch made onion rings
and a loaded sandwich. What kind of bread is this on? Wheat berry bread. Oh, last but not least,
for our savory options. It’s the chicken fried steak. You got this thing
smothered in gravy. Mashed potatoes on the side with the green beans
and the green beans. You can see
it’s got bacon floating in there It’s got some onion action
going on. This is like as as just home
cooking as it gets, right? Yes. So much for having us out here,
Granny D…s right outside Canyon Lake. It’s a beautiful restaurant, a cute little diner
that holds a lot of people. I’ll tell you that.
This place is packed right now. I mean, we’re here
on a normal day on a crazy day,
there’s wait outside. It gets. It gets over the top. So come out here, come hungry,
bring the family, and I’ll tell you what. You got to finish it off

What? Oh, God, I love this place. So good. Now we’re
here in Houston off of Travis to go inside of an institution that is serving up iconic bites
since 2001, when visionary chef and restaurateur Marcus
Davis opened up the spot. Let’s see what they’re serving
up today at The Breakfast Klub. Now we’re here
inside the dining room. And joining us right now
is general manager Terry Price. Thank you so much for having us.
Thank you for having me. Now you guys have brought out
the goods, including, I mean,
one of the most iconic dishes that you can grab
when you’re here in Houston. The chicken waffles dish here. Since 2001, The Breakfast Klub has been the spot
to come to for great bites. And that dish
being in particular the one I mean, there’s right.
It’s all over the wall about it. There’s an award over here
from Steve Harvey. What does this experience been
like for you? It…s phenomenal. Just to be able to serve
amazing food, to interact
with customers on a daily basis from all over the world,
from all walks of life. It’s a really,
really unique experience and I want to start over here
in the front because you have a fried pork
chop plate that looks absolutely nuts. So we have our crispy pork
chops here I…m mean they…re fried to perfection. We have our over medium egg and we have our buttery grits
right here. And then we have our butter
thick cut Texas toast. And now I will say the way
we eat our pork chops here. You right at home
your family now okay. So we pick it up by the bone
and we bite into it oh we’re going straight in. So we’re going
straight in right here. Cheers. Cheers.
All right. Fried pork chop. Wow. Big flavor. What’s the secret to that? So right here, the Breakfast
Club, our tbk seasoning uses this seasoning
for all of our proteins and our potatoes as well. I’m going to pop this egg. I want to get
a little bit of that action. This time
give me another one right there. Oh yeah. Bam. Now right in the middle of the
eggs Benedict, another banger. What are some of the elements
that go into building this dish? Very rich, creamy
with the hollandaise sauce. So yeah, you’re poached egg You have your buttery,
flaky biscuit on the bottom and it’s layered with our bacon,
I think the bacon, our ham and our turkey,
that’s perfection right there. Give me some love
on that one. This was a little sweet
a little salty. The eggs they pop in create that
other sauce out of the yolk. The hollandaise.
That is incredible. The biscuits and gravy. What makes this dish stand out? Not your traditional biscuits
and gravy. You have your buttery,
flaky biscuit. It’s, covered with our homemade gravy
and our homemade pan sausage. Definitely a fan favorite. And y’all know if it ain’t
dripping, you’re trippin. The gravy is just, like,
very thin. So very velvety. And the sausage is a beautiful
breakfast sausage. I would almost put an egg
on that thing and call it a day. A lot of people do. Yeah, you can, you can throw
an egg on there as well. So this is our meaty three omelet. It has three meats with the homemade pan sausage,
the bacon and our ham. This is the breakfast
of champions right here. Wow, that’s a crazy dish. It is. That…s a lot of food. Looking at everything, the sandwiches might be
a little underrated here. Very underrated
because everybody else is going for the big plate. But this sandwich looks like
it’s packing a lot of flavor. Not your average BLT at all. It’s very simple. You have your
your thick cut bacon again, your crispy lettuce,
your thick cut Texas toast. That’s butter to perfection.
And your juicy tomato. Thank you so much for having us. The Breakfast Klub, man. If you’re

Hi. We love being out here
at the Jerk Shack. So you have some
traditional items that we know and love
right here in front of us. But you got some new things. So talk to me about the new item
you got over here. The new items. Our first one is our catfish
and grits. We do like a jerk
marinade on our catfish. Then we fry it southern style, and then we’ve paired it
with a green onion pesto. And it’s got a little butter,
a little bit of cream, a little bit of butter
that think back in the water. Swim in that butter over here. That…s how we like it. Very nice It smells incredible
I’m excited. Here we go. That’s the bite. That’s incredible. The grits are so creamy. But you has a slight texture
to it which is beautiful. The crunch you get from the fish
I love it. It’s got a nice little spice
to it as well. If you love grits,
you love catfish. You’re going to be blown away
by this bite right here in the back. The curry nice and caramelized
on the outside. So some of those sugars
cooked down. Look at that bite. Come on. Cheers to you. The curry. Here we go. The aromatics. Pop. The plantain is creamy. The crunch from
the cabbage is beautiful. The rice is fluffy. And the chicken
you can see on the inside. It has all that flavor
on the outside. On the inside, very tender,
still juicy. Everything just works
really well. The way you compose dishes
is top notch. In the front. This one’s loaded up. Now this looks like a solo
mission, so I am going to go in
on this one. So we’ve got our pineapple
habanero slaw, our jerk pork on there
and our jerk barbecue sauce. All right. We doin it okay I’m going to get a little messy
with this one. Here we go. Wow. That one’s saucy. Give me some elbow on that one. I’m gonna need some napkins
after taking that bite. Every aspect of this works. The pineapple pops inside
a little bit of a sweet acidity that you want to balance out
the bite as well. The mac and cheese on the side. And, you know, I got to get my scoop
of obligatory mac and cheese while I’m out here.
And look at that. Y’all put in the cheese
and mac and cheese. And in the back over here
you have three tacos lined up. You’re getting jerk
chicken, pineapple habanero slaw, pickled onions,
and our avocado crema. Cheers. Cheers. Oh my God, if it ain’t dripping
you’re trippin. Look at that.
That’s flavor right there. This is incredible. I love the size of them.
The amount that comes with it. The garam masala fries. This is flavor on flavor
on flavor. This is our mixed chicken plate. It’s our most popular plate. This plate alone
is the experience that people are looking for
when they come visit. All right.
Cheers. The jerk chicken. Give me some elbow. Bam! The
char, the flavor, the seasoning. The spice the spice. The flavor alone on this,
though, is outstanding. Now I want to still have that
Caribbean flavor profile. We’re here in South Texas and I’m Jamaican,
but I love certain dishes. And so this is like
a reflection of my heritage, but also my lifestyle
here in South Texas, using what’s available to recreate
something of my heritage is really important to me. I love that it’s beautiful.
It’s delicious. My favorite part of history and culture is
when you get to eat it. You guys. The Jerk Shack
located here in San Antonio. It is iconic. You guys are expanding,
you have different brands
you’re representing as well. So you have so many
different ways that you can try chef
Nicole Blaque’s food. And I know we’re going to hear a lot more from you coming up

that’s celebrating seven years
here in New Braunfels. Plus, they’re serving up
some delicious treats that you got to save room for. Let’s go see what they got
on the menu at Tin Top Burgers. Joining us now is chef, one of the owners out here at
the restaurant, Chase Piedfort Thank you so much
for having us in the kitchen. Yeah. No problem. Now you’ll be making a burger
for us. It’s one of the most popular
burgers on the menu. We’re making the classic
cheeseburger today solid. I mean,
it doesn’t get any better than Americana cheeseburger,
but you all do it your way. What’s the first thing you do
to make it first step? We’re going to get our onions
on the grill. Very nice.
A little oil on those. You get those. Grilling
our house patty on the grill. It’s an 80/20 ground beef but
it’s blended with ground pork. Give it a little extra
juiciness and flavor. And they’re smash burgers. So we’ll smash that guy out. Oh, yeah. There you go. Yeah. We let to go a few minutes
here. We’ll get some salt
and pepper on it like that. In the meantime, we can be dressing our hamburger
bun straight into the toaster. Just a solid brioche style bun. Little mayo here. House mustard green
leaf lettuce on top of that. Tomatoes, pickles. Oh, yeah. Look at that. That’s how you know
it’s going to be crispy. And then on top of that
cheddar cheese. Get that melty. It’s off the flattop
onto the bun like that. Wow. Flip
that over a little pick. Keep it all together. And that’s the Tin Top
classic cheeseburger. Chase thank you so much, sir. Yeah, this looks
absolutely incredible. A couple different sandwiches,
burgers on the menu here. That you…re going to
be bringing out. and then Lindsey and I
are going to go on to the dining room and try them out. Joining us now the dining room

I’m gonna tell my doctor. Yeah, I had a salad this week

yeah, it’s really good. The dressing works. The pickled items
work at the beet. Very seasoned
with a crispy bacon. Very nice. We got a burger in the back.
What’s going on with this one? This is a burger that you can
actually only find here. I’m pretty sure
in the entire world we took a classic Reuben sandwich
and we made it into a hamburger. It’s got sauerkraut. It’s got thinly sliced pastrami,
an amazing Russian sauce. And of course,
our signature patty, which is a combination of beef
and pork. Look at the inside
of this thing. Cheers. Cheers. All right.
That’s the bite. Oh, wow. Oh, yeah. Okay, so Reuben sandwiches
are like, my favorite sandwich. It’s the best sandwich
you guys are taking this to a whole other level. Attached to tin top
is Ray’s ice cream. And Lindsey
there’s a variety of flavors. How many flavors? 15 flavors
we make here in-house. And what are the three top
flavors? I would say coffee Oreo a s’mores ice cream
is my father’s favorite as well. Goat cheese and raspberry jam,
which is sort of like a cheesecake. Kind of like a goat cheese cake. Well, let’s try
the coffee, Oreo, I insist. Okay, perfect. All right. Cheers. Cheers. Coffee? Oreo. Oh, yeah. This is the first flavor I ever came up
with as an ice cream man. It’s been one of my best
sellers. This is so good. I love the coffee flavor.
I love Oreos, too, so blending it
to make the perfect bite. I’ll tell you what
