Cannolis

Ingredients:
For the Shell:
¼ cup + 1 tbsp flour (I used gluten-free)
½ tbsp granulated sugar
Pinch of ground cinnamon
Pinch of salt
½ tbsp unsalted butter
1 egg yolk
1 tbsp water
Egg wash – 1 egg, lightly beaten
Cinnamon sugar – 2 tbsp granulated sugar + ¼ tsp ground cinnamon

For the Filling:
¼ cup + 2 tbsp ricotta cheese
¼ cup mascarpone
2 tbsp powdered sugar
Pinch of salt

Directions:
For the Shell: In a bowl, combine the flour, sugar, cinnamon, and salt
Add in the butter and mix by hand or pulse in a food processor until the mixture resembles coarse crumbs
Add in the egg yolk and water, then mix until a dough forms (if too wet, then add more flour, 1 tablespoon at a time)
Roll the dough out into a sheet around ⅛-inch thick
Use a 1-cup measure to cut circles out of the dough, forming it into a ball and rolling it out again until the dough is all used
Wrap the dough circles around 2 fingers, one at a time, and press the seam together where the two sides meet, then brush egg wash onto the seam to seal (only prep these one at a time, right before you fry them)
In a pot, heat 2-3 inches of canola oil to 350 F
Cook the cannoli shells on both sides until golden-brown, around 5 minutes
Remove from the oil and immediately dip into the cinnamon sugar to coat
For the Filling: In a large bowl, use an electric mixer to combine the ricotta cheese, mascarpone, powdered sugar, and salt, until creamy, then fill into a piping bag
Pipe the filling into each cannoli shell from both sides

I am making the absolute worstrated foods to answer the question, are they really all that bad? This is a food that has been described before as one of the most overrated desserts to probably ever exist. These are canoli, and the main complaint that people have is about the filling. Some people say that it is way too sweet, while others claim that it tastes like chalk, which makes sense if you are buying a 12-pack off the shelf at your local hardware store since those are probably filled with more additives and stabilizers than a plastic surgeon’s waiting room. But a mouthful of sugary cream isn’t always a bad thing, especially if it is made fresh at a bakery. And if it isn’t the filling, then it’s the shell. Because the second main complaint that people have is that the shell is either way too soggy or way too rubbery. And to that, the only thing to say is that you have clearly never had a proper canoli before. But in case you were wondering, the shell is supposed to be crispy. Hi, I’m a writer who likes food. And for some reason, I was under the impression that Italians do not know how to make good desserts besides tiramisu. But that was so wrong. These canoli were super good and also surprisingly easy to make.

  3. My boyfriend claims his grandmas conolis were legendary. So much so that she only made them on special occasions and she had to keep her his grandpa from them because they were his favorite and he'd eat them all (purposely not eating dinner to save space for more canoli) before guests had a chance. He said that and the way she sautéed peal onions.

  4. I used to get cannolis every friday for all our roommates from an Italian bakery, never heard these complaints. A good solid cannoli is like one of the best desserts available. The espresso and pistachio onces were my favorite.

  6. I'm not fond of the texture, but I've always accepted that as a me thing. And tbh, the most overrated dessert is sugar cookies (not snickerdoodles, those slap, I do mean actual sugar cookies). They're just… ugh. All of the desserts and baked goods you could have made, and you made the beige of cookies. No flavor, just sweet.

  7. At work we sell these as well. They last months.
    The shell is sticking to every part of your mouth and the filling sent a shockwave throughout my body because it was too sweet.
    The ingredient list contains more perservatives than actual ingredients used in fresh ones.
    Personally they shouldnt even be considered canolli because it's an insult to the real stuff

  9. Took 1single bite of a cannoli about 10-15 years ago. It was nasty! And these were good cannolis. From a bakery, top rated, loved and raved about. I threw it away!! Have never tried cannoli since then lol.

  10. a group of students sold these at the first day of our school fair and idk how they did it but they made an absolutely delicious cannoli with a creme bruelee flavored filling it was so delicious, unfortunately they sold out and never were restocked in the following days

Italians can definitely make desserts, but the problem is that people tend toonly go to more famous touristy places where the food isn’t as authentic and the culture has been kind of spoiled by too much tourism. I come from Apuglia and an example of a great Italian dessert is pasticciotto. There is also crema al chantili, cartucci, babá, coda di aragosta, and many more just from my region alone.
