Creamy Greek yogurt pasta salad. Who doesn’t love a great pasta salad? This healthy, creamy, satisfying Greek pasta salad is really delicious. To make it, bring a pot of water to a rolling boil. Add salt and then add the pasta. For this recipe, I’m using what we call kofto macaronaki in Greek or ditali as the Italians know it. Have the cherry or teardrop tomatoes. Slice and chop the cucumbers. Desell pepper. Mix the tomatoes, cucumbers, onion, calamata, olives, chickpeas, feta, parsley, and oregano all together. Make the creamy yogurt sauce. Whisk together Greek yogurt, olive oil, white wine vinegar, dijon mustard, oregano, garlic, salt, and pepper. You can replace the white wine vinegar with a little lemon juice if you prefer. Drain the pasta and add it to a mixing bowl together with the vegetable chickpea mixture and the creamy yogurt sauce. Toss everything together gently and serve either warm at room temperature or chilled. Easy peasy and super healthy. This is a great quick meal.
