220 grams honey, 140 grams dark brown sugar, two 12oz bags cranberry. i forgot to add pumpkin pie spice as planned. Filled 23 quart pressure cooker with 120 degree water until stick halfway to max line. Tossed impulse sealed bag of cranberry and sugars (non vacuum) into water and used a KitchenAid mixer bowl with two jars of pizza sauce to weigh it down. Took maybe 25 minutes to get to 189, let go another 80 minutes.

Im very happy with it but would like to try this again in two formats : blend the berries first and another batch immersion blended after the cook.

    I honestly just cook mine in a pot. You need to hit a pretty high temperature for the berries to burst and the pectin to gel.

    Or just use a pot. This isn’t a dish that requires precise temperature control. This seems like a lot of fuss with little/no gain.
