Sometimes you just need to make a dinner that sneaks in a ton of veggies but tastes like pure comfort food. And when that time comes, we make baked ziti. This is kind of like a more laid-back lasagna. You just kind of dump everything into the casserole dish in layers. We’ve got that veggie pasta sauce, a ricotta and spinach mixture, and then your pasta. All of that can be done a few days in advance and just stored in the fridge until you’re ready to eat. And then just bake until golden and gooey. Happy eating.
