These marinated artichoke hearts are so delicious. They’re perfect as a pasta sauce, on top of pizza, or even served with your favorite protein. Here’s what you need. One can or jar of artichoke hearts. Drain them, then cut them in half. I like to use my kitchen shears to do this. Next, add 1/4 cup of extra virgin olive oil to a bowl. Add in 1/4 cup of fresh lemon juice, two garlic cloves that have been thinly sliced, and one teaspoon of Italian seasoning. You could also use a mix of dried oregano and thyme. And if you like a little heat, add a half teaspoon of red pepper flakes. Add in a half teaspoon of sea salt and 1/4 teaspoon of freshly ground black pepper. And lastly, add the zest of one lemon. Next, add your artichoke hearts to the bowl and gently toss to coat them in the marinade. Transfer them to a jar or an airtight container and refrigerate for at least 2 hours, but preferably overnight. But before serving, bring them to room temperature and garnish with some fresh herbs or shaved Parmesan cheese if you’d like. And that right there is your quick and easy marinated artichoke hearts.
