After being lifelong dedicated to Tabasco I’ve NEVER seen it do this. Despite shaking it, 20 minutes later it’s back to this. Brand new bottle.

  2. This happens if the tobasco has been frozen and thawed. Perhaps even just got really cold.

    You can just shake it up and continue to use it unless it gets too old and loses its colour.

    I’ve had this happen, it’s vinegar separation. In my case I’m pretty sure it’s because of where I put it in the pantry. It got me to lower my liquids and raise my dries (noodles, flour, gravy packets) to the top.

    A good shake will recombine the vinegar and the mash.

    This happens if you keep it in a pantry in potentially a warmer house or spot. It’s not bad, just shake it up. Just vinegar separation. I keep mine in the fridge so it’s far less likely to do this, and I prefer cold Tabasco.

    I’ve only had this happen leaving it outside of the fridge, personally.

    What are the LOT numbers on the back labels of both bottles? Also what LOT is on the bottle that separates after storing for 20 mins?

    And that’s why I keep my hot sauces in the fridge even if the bottle tells me I dont have refrigerate.

    I shook it up and dumped it on my eggs and it was still delicious.

    I’ve noticed the same thing on my current bottle. I’m a longtime fan of tabasco and always within reach of a bottle at my house and never had this with it before. It’s something I would see with my homemade sauce occasionally but never seen it with the gold standard. Something must have changed at the manufacturing plant.

    I’d enjoy a separate mix like this, maybe in one of those gravy/fat separators? Get some nice spiced vinegar for some things then more concentrated Tabasco pepper… why the heq not

  12. The emulsion has broken causing the separation, natural as it doesn’t contain any stabilizers such as guar or xantham gum. Likely a malfunction of the blender they used. Adding it to a blender like a vitamix and hitting high speed can fix it but it’s overkill, just shake before using should work you’ll just have to do it every time.
