Did You Know? Shakshouka is believed to have originated in North Africa, especially Tunisia, before spreading across the Middle East. Early versions didn’t include tomatoes, because tomatoes weren’t introduced to the region until after the Columbian exchange.

Ingredients

  • 3 small tomatoes
  • 5 green onions
  • Olive oil
  • Salt
  • 3 eggs
  • Shredded cheese
  • Cinnamon

Directions

  1. Slice the tomatoes into round slices and dice the green onions.
  2. Heat a pan over medium heat and add olive oil.
  3. Lay the tomato rounds in the pan and cook for a minute or two, then flip them.
  4. Sprinkle with salt, then crack the eggs directly over the tomatoes.
  5. Add the sliced green onions on top, cover, and let everything cook until the eggs begin to set.
  6. Sprinkle shredded cheese over the eggs, cover again, and let it melt.
  7. Finish with a pinch of cinnamon.
