Seolleongtang is my favorite Korean soup. It even beats Pho for me. Since oxtail is hella expensive to buy and then takes so long to make at home, I get this soup only once a while at a local Korean restaurant. It’s not cheap but it is worth it.

I didnt fully appreciate this until I became an adult. Viscous and hearty broth like a Japanese ramen soup. But also presented plain for you to flavor to your enjoyment like pho. Its like ramen for rice.

The restraint you show on kimchi portions is admirable. I would probably eat at least 3x that with seolleongtang.
