These circular sesame seed encrusted breads are a popular breakfast and street food that some historians trace all the way back to antiquity. The name kori is derived from an ancient Greek name for a circular barley bread that was fed to slaves and eaten in typical Greek households. Known as simmit in Turkey, though some maintain that they are two different products. The oldest written reference to it is from 1525 in Constantinople which is now in Stanbul. By 1630 there were 70 bakeries in the city that prepared the snacks. Many sources say that they came to Greece with the Christian Orthodox Greek refugees from Asia Minor who settled in large numbers in Thessaloniki. Interestingly though, street venders in Constantinople would refer to the breads as Kuri of Thessaloniki, suggesting they originated there. So who’s right? Back in 2012, this humble little bread was the subject of a custody battle between Greece and Turkey. The Simmit sellers Chamber of Istanbul filed a petition requesting that appropriate measures be taken to protect the simmit through a national and international patent, cancelling any Greek claims to its origin. In response, the general secretary of the Thessaloniki Bakers Association said, “Everyone knows it’s from here.” Two years later, they launched an attempt to bake the world’s largest kuri.
