As you probably already know, I get so excited to cook with tomatoes, especially when they are roasted because they become sweet, chammy, and are great to go in just about anything. So, today we are roasting some tomatoes to top onto some beautiful whipped goats cheese. Once you’ve added everything to a roasting pan, you want to bake this low and slow for 50 minutes. Remove the garlic from the pan. And when it’s cool enough to handle, we want to squeeze out all of those cloves. The garlic will melt into the goats cheese when we whip it all together. Now, I feel pretty honored to live in the same state that Meredith goats cheese is produced because it is the best goats cheese you will ever try. It’s soft, creamy, and whips up beautifully. Add it to a blender along with a drizzle of the oil from the jar, all of that roasted garlic, a big squeeze of lemon juice, and a pinch of salt and pepper. I was really struggling setting my blender up. But once I sorted that out, I blended it all together. Now, I can’t make a dish like this without some olive oil fried bread. And I am using a beautiful loaf from Iara Sourdough. Drizzle one side of the toast with olive oil. Flip it over in the pan and rub the oil all over the bottom and then flip it back over. Toast on a low heat for a few minutes on each side or until it’s golden and crispy. It will taste like one big crouton. Serve up the whipped goats cheese in a bowl and then pop the roasted tomatoes on top. I left some on the vine as I just thought they looked really pretty this way. Sprinkle some fresh thyme and drizzle some honey all over. Crack open that bread. Spread everything all over and enjoy. You are going to love this one. It was just so delicious.
