    If you’re wondering about goat cheese cheesecake and we’re disappointed to see the no recipe, take a look at clair saffitz cheesecake on serious eats. She uses one stick of goat cheese to like 4 cream cheese but she talks about why it’s good and ways to balance it. I don’t remember it all but it was a good read

    Edit: probably Stella parks recipe actually. Idk I copied it to notes so I wouldn’t have to keep looking it up every few weeks

    Slightly on-topic, but a local cheesecake bakery has savory goat cheese and rosemary cheesecakes (as well as some other savory cheesecakes) that I’ve been interested in. Unfortunately, her shop is about an hour and a half away from me and I can never find the time to stop by there.

    What is a good practice to verify a little bit Gooey center in basque cheesecake? Use a thermometer or something?
    I got a deeper form with shorter radius and I still fail my attempts.
