Another date night meal as we wedding budget

Recipe:

I browned down 3 sliced yellow onions and a couple cloves of garlic in oil. After about 15 mins on low/medium low heat (this was before work, I had to move fast), I sprinkled a little flour stirred for another minute.

Seared a cross rib roast I had thawed after seasoning generously with salt and pepper in about 1 tbsp oil and 2 tbsp butter. I deglazed the pan with some (a couple tsp) sherry vinegar and a tsp of some Worcestershire sauce and added it to the slow cooker on top of my cooked minced garlic and onions.

The broth was 2 cups beef broth, 1 tsp sherry vinegar, 1.5 tsp Dijon mustard, a little more Worcestershire sauce whipped together.

Added fresh thyme and then just a few leaves of rosemary and a bay leaf. Cooked on low for 8 hours.

When it was done, I reduced the sauce and served on Parmesan polenta, onions, topped with cheese (I didn’t have Gruyere but did have Ciresa Fontina and chives).

And I made a little galette for dessert 👍🏽
