the real star of gimbap is actually the rice, when its flavored with a little bit of sesame oil and salt. It fuses with the seaweed creating an umami vehicle for any fillings you put inside. You dont really notice it. But you keep taking a piece and another piece. Same reason why bibimbap is so good. The sesame oil and gochujang rice hits the umami palette on your tongue.
I remember trying it for the first time I been trying to get some 👨🍳
