



Hi Breadit! I'm disabled and spend more time than I'd like at home, grocery trips are tough for me, and I felt like I needed some purpose to my days here. With how fast we go through bread in my house, and how expensive it gets on account of me loathing the taste, texture and smell of the cheap brand stuff, I decided it was time to try my hands at baking some bread myself from a simple recipe.
First loaf was gummy and didn't rise well, but I accessed my possible mistakes, and the second loaf was much better, if still weirdly gummy at the bottom. I had followed the recipe to the letter, so I decided I needed to troubleshoot things myself.
I approached the third loaf with a scientific mindset, going over how certain things like the water temperature, how I handled it, the temperature of my kitchen (freezing!! It's snowing here) and more were effecting my bread. I also adjusted the amount of flour and water by small amounts, and out came a spectacular loaf! Not perfect, sure, but way better.
With the fourth loaf, I started to get the technique down, I've memorized the measurements and the steps mostly, and my friends have outright told me they prefer my bread even over the pricier store baked bread. Now I think I'll just do this. It's a fun little hobby and I get to watch my friends eagerly tear into sandwiches made with my bread, and I enjoy crusts more than ever before.
I included a picture of each loaf, the first loaf in the pan, the second with a slice cut out of it, the third while it was cooling, and the fourth as just a slice I snatched to have with some butter today, as I forgot to get a picture before it was cut into pieces, though it looked similar to loaf 3 anyway.

Welcome to the club, i’ve been baking all our bread and bread products for the past 5 years, it’s tough eating store bought stuff anymore, even the ‘good’ brands.
Looks yummy! Butter/grease the top when it’s hot out of the oven to keep it soft 🙂

I used butter on the pan instead of cooking spray, and brushed the top with a little butter for fun because I really like how it makes the crust taste and look, and I added just a little more flour for the reasons stated in my post.

I stopped buying preservative laiden store bought bread products like 8 years ago. Will never go back.
My current favorite is a 40% whole wheat Pan de Mie.

Looks delicious! I’ve been baking our bread for about a year but just started doing English muffins! The kid was home from college last week and vowed they’d never eat a Thomas English muffin again! Lol It really is amazing once you taste it, you don’t want to go back!

Wow. This is hands down the wettest beginner-facing recipe I’ve ever seen. I’m honestly impressed you got it on the third/fourth tries. Most people struggle, early on, with anything over about 70% hydration, and that recipe is sitting at 83%!
Helps that you don’t knead, to be fair, but you’re halfway to sourdough already, with that much water in play.
Won’t last as long, but will be a heck of a lot healthier!

The difference in your body and digestion is huge, once u start making ur own bread and stop eating supermarket bread, I have been making my own bread for the last 2 years or so and i will never go back
I have tried so many times to start a sourdough culture but it fails every single time, I will get it going one day lol
Do you use the instant dried yeast or fresh?
