    Upon opening, the wine immediately started a masterclass of evolution on the nose with notes of dark rose petals to mild asian spices and a hint of syrupy sweetness. However, the palate showed so much rigid structure (tasted almost sour with a bitter aftertaste) even after 3 hours in the glass that I decided to recork and revisit it the next day.

    Only then did I understand why others have said that this vintage was open for business. Think bold raspberries, strawberries with the ever-so-prevalent vosne spices all tied together with a bright, oaky acidity. Super young and missing the forest floory charm of aged burg, but still very complex nonetheless. Finish was moderately long and tasted of silky grape skins.

    Paired with In n Out’s double double + grilled onions and cheese fries. Crunchy buns complimented the berry-forward tannins, vosne spices adding to the seasoned patties, acidity cutting through the fats and cheese – concluded with a velvety coating on the palate. This was a pairing for the ages.

    I’ve actually been interested in trying this combo, I heard burgers and wine actually pair very well.

  4. Well done on the pairing. I’ve done similar with a 3×3 with grilled onions and a Patricia Green 2018 Willamette Pinot Noir. I’d love to reminisce and pontificate about it but sadly I’m two G&Ts into it all and it’s late Wednesday night.

    That’s a Zalto glass. But Spiegelau is very similar, and if you’ve never held both glasses in your hand, you won’t be able to tell which is which.
