Not a huge fan of blue cheese, but it does serve a purpose. Had a bit on vacation a couple weeks ago and was thinking of this on the flight home. Small schmear of kewpie and mustard, sprouts, red onion, dash of sub sauce, tomatoes, S&P, bacon, shallow fried chicken cutlet with some buffalo sauce and a blue cheese crumble on top, toasted sub roll with a splash of olive oil.
