Just came back from Italy and one of the big “no-no’s” social media warned me about was putting cheese on seafood dishes.
Welp, I’m back on US turf and I feel no shame for sprinkling Parmesan on this shrimp-orzo – I dare you to yell at me for it! 😂
30-min, one-pan, burst of flavor!
✨Ingredients
Raw shrimp
1 cup dry orzo
2 tbsp tomato paste
2 garlic cloves – minced
1/4 cup white wine or cooking wine
1/4 cup heavy cream
Chicken broth as needed
2 cups fresh spinach
1 tsp garlic powder
1 tsp onion powder
1 tsp smoked paprika
1 tsp dry parsley
Salt and pepper
Parmesan cheese
1️⃣ Mince the garlic and season the shrimp with salt and pepper and a mixture of onion powder, garlic powder, smoked paprika and dry parsley.
2️⃣ Saute the shrimp in a splash of olive oil. Once fully cooked add the garlic and cook for 30 sec until fragrant. Add the orzo, tomato paste and wine and mix well. Add enough chicken broth to cover the pasta. Season with salt and pepper. Cover the pot, lower the heat and simmer until the liquid has been absorbed.
3️⃣ Periodically stir to prevent burning the bottom and add splashes of chicken broth as needed until the pasta is fully cooked (similarly to how risotto is cooked).
4️⃣ Once the pasta is almost ready but still slightly liquidy, add the spinach and mix until wilted. Then add the heavy cream and stir. Serve with fresh Parmesan cheese on top.
