Some leftover chilli that my partner made using kidney beans, black beans and vegan mince, then added some leftover crispy air fried chickpeas, sweet potato and cauliflower that he made yesterday. And I added a load of sesame, chia and sunflower seeds, some nooch and a handful of microgreens. The dressing is tahini, miso, good quality EVOO and a small amount of unsweetened almond milk.

My perfect kind of thrown together meal using leftovers that goes max on the plants. I realised today that I’ve been vegan for 10 years now! 🫶✨🌱💚
