So id say this is borderline okay, although it kinda doesn’t embrace the spirit of grilled cheese.
This is more like a cheese roll vs a sandwich. With a grilled cheese I’d say you’d need to have two pieces of bread with cheese in the middle.

I’m gonna defend this. It’s grilled and there’s cheese. Definitely unconventional, but this is an excellent form factor for dipping

Another way to do those would be to cook it like regular grilled cheese then cut it into strips then roll it up. After that crisp up the cut ends in the pan.
